Mocha Rice Krispies Treats are a new flavor twist on a classic favorite. A layer of cocoa krispies mixed with coffee, topped with a second layer of traditional Rice Krispies for that cute “coffee foam” callback.

Wanna know the secret to any homemade Rice Krispies treat recipe? Besides adding fun flavors like mocha I mean. More marshmallows! I’ve tweaked the traditional recipe to make this small batch recipe have the perfect ratio.

There’s something about homemade Rice Krispies Treats that’s just so different than the prepackaged ones. The gooey, stringy fresh marshmallows really make all the difference. I make a point to buy name brand marshmallows. I find the generic brands don’t melt evenly. They tend to have pesky lumps that never seem to melt, and make less even treats. You can still use them of course—there’s nothing wrong flavor-wise! But in my experience they just don’t come out quite as evenly or easily as the name brands.

For this recipe, we’re diving the recipe into two batches, one for the mocha Rice Krispies Treat layer and one traditional. You can stack them however you please, but I like the mocha layer on the bottom. That way the white layer is a callback to that coffee foam you get on your fresh mocha! The best part is that you can just use the same pan for both layers. And the time it takes to make the second layer leaves enough time for the first layer to cool a bit. But because of the sticky marshmallow, you won’t have to worry about the layers separating.

This is a small batch recipe which means it makes 8 treats when cut. The perfect amount when you want a sweet treat but don’t want to overdo it. Or a perfect way to use up some leftover Rice Krispies cereal if you bought the family size and are getting sick of it for breakfast by the end. Mocha Rice Krispies treats to the rescue!

Wanna know the secret to Rice Krispies? More marshmallows. =]. Plus it doesn’t hurt to throw in some scrumptious flavors to change up a classic. These mocha Rice Krispies treats are a perfect blend. With two layers of marshmallow goodness, these are a party in your mouth!

For an extra pop of flavor, you can always serve with chocolate covered espresso beans! You can even pop a few into the still warm top layer if you’re feeling that extra caffeination. Once you do, don’t touch them or you’ll risk smushing them! It will still be delicious, but you might have to watch your chocolate paws else you’ll track chocolate around. The residual heat definitely makes them go ooey gooey temporarily. If you press them into the treats and leave them though, they should firm up while cooling.

secrets to success;

  • Be prepared with all your ingredients for both layers. You don’t have to rush, but you’ll want to start the second layer immediately after you spread out your first layer. When they’re both still warm, the layers will stick together and form one cohesive treat.
  • Layer as you see fit! I put the vanilla rice krispies layer on top because aesthetically it mimics the coffee foam, but if you want the mocha front and center, then make it second.
  • If you like that extra pop of espresso, press some coffee beans into the top layer for an extra caffeinated crunch. Or even better, go with chocolate coated espresso beans. If using chocolate coated, press them in and then don’t touch! It’s tempting, but they’ll melt due to residual heat and you don’t want to smush them too bad. (It won’t hurt anything taste-wise, just your treats looking pretty.) Wait for it to fully cool before diving in!

Ingredients

  • cups chocolate puffed rice cereal
  • Tbsp salted butter
  • 2 Tbsp instant coffee
  • 4 oz large marshmallows (roughly ⅓ bag of jumbo marshmallows)

  • cups puffed rice cereal (Rice Krispies)
  • Tbsp salted butter
  • tsp birch salt (alternative, kosher salt)
  • 4 oz large marshmallows (roughly ⅓ bag of jumbo marshmallows)

Instructions

  • Prepare a loaf pan by spraying lightly with cooking oil and lining with parchment paper so the paper sticks to the pan. Then lightly spray the parchment paper to prepare for the treats.
  • Melt 1½ Tbsp butter in a medium pot. Over medium heat, melt the butter.
  • Remove from the heat and add marshmallows. Stir consistently until marshmallows begin melting. Once marshmallows have started to dissolve, add pot back over low heat and continue stirring until fully melted.
  • Add the 2 Tbsp instant coffee and give a quick stir to mix.
  • Add the 1½ cup chocolate Rice Krispie cereal to the pan and stir so everything is coated.
  • Don’t use your hands, the marshmallow may be hot! Using another piece of parchment paper, or the flat bottom of a glass, press lightly into the corners and flatten the treats. You can also give a light dusting of cooking spray to your surface to help keep it from sticking.

  • Repeat general instructions for making rice krispie treats: Melt 1½ Tbsp butter in a medium pot. Over medium heat, melt the butter.
  • Remove from the heat and add marshmallows. Stir consistently until marshmallows begin melting. Once marshmallows have started to dissolve, add pot back over low heat and continue stirring until fully melted.
  • Add the 1½ cup regular Rice Krispie cereal to the pan and stir so everything is coated.
  • Don’t use your hands, the marshmallow may be hot! Using another piece of parchment paper, or the flat bottom of a glass, press the rice krispie mixture on top of the mocha layer. Press into the corners and flatten the treats taking care not to compact them too much.
  • Allow treats to set for at least an hour.
