Channel your inner cookie monster with these cookie monster rice krispie treats! Bright blue rice krispie treats studded with all sorts of cookie goodness. Ooey gooey classic rice krispie treats that pull apart with strings of marshmallow. The cookies scattered on top add crunchy, chocolatey goodness that gives extra texture in every bite. Plus if you’re feeling goofy, grab some candy eyes so your treats can look right at you!

The blue color comes from blue food coloring. You want a bright blue to evoke that cookie monster inspiration. They are called cookie monster rice krispie treats for a reason! I used about 1 Tbsp of blue food gel coloring, but adjust to your desired color of blue based on your coloring.

When it comes to cookies, the more variety the better! Here I used all gluten-free cookies to keep these cookie monster rice krispie treats gluten-free. So I used gluten-free oreos, gluten-free Tate’s crunchy chocolate chip cookies, and gluten-free crunchy Partake birthday cake cookies.

Use your favorite cookies! If you want suggestions, go with crunchy cookies. They hold up to the stickiness of the rice krispie treats and add texture.

Use your favorite cookies! If you want suggestions, go with crunchy cookies. I really like Tate’s chocolate chip cookies because the whole shtick is that they’re crunchy! You always need to add oreos–they’re a classic. And thirdly I love the Partake crunchy birthday cake cookies. They hold up really well to the sticky cookie monster rice krispie treats, add texture–and taste yummy to boot!

I can’t say for sure because I haven’t tried the alternative, but I imagine using the non-gluten-free versions would work just as well. Although Partake as a brand is allergen-friendly so if you really want that sweet, sweet gluten, you might need to pick another brand.

But go with your favorite cookies, that’s what makes any recipe the best. Besides, cookie monster doesn’t discriminate after all! If you want to, you can also break up the cookies and mix them in with the rice cereal for extra cookies throughout every bite! But keep in mind they’ll get some blue goo on them.

For extra fun for the kids, grab some candy eyes and stick them on! It’s a fun extra googly eyes, but I personally am not a fan of my food staring at me (and I didn’t have any) so I skipped them this time.

You can make these rice krispie treats ahead of time, so they’re perfect for a party or to share! If you want to share them. My favorite part is cutting the squares because then I can eat the edges I trim off. It doesn’t count if they’re not full squares right? But the three I ate after that might have counted. I guess. Get your cookies ready and get to meltin’ some marshmallows!

Ingredients

brown butter rice krispie treats;

  • 3 cups puffed rice cereal (Rice Krispies)
  • 3 Tbsp salted butter
  • ¾ tsp birch salt (alternative, kosher salt)
  • 8 oz large marshmallows (¾ bag of jumbo marshmallows)
  • 1 Tbsp blue gel food coloring

  • 2 crunchy chocolate chip cookies (e.g. tates crispy cookies, or partake chocolate chip cookies)
  • 3 oreo cookies
  • 2 birthday cake cookies (e.g. partake)
  • candy eyes (optional)

Instructions

  • Prepare a loaf pan by spraying lightly with cooking oil and lining with parchment paper so the paper sticks to the pan. Then lightly spray the parchment paper to prepare for the treats.
  • Melt 3 Tbsp butter in a medium pot. Add ½ tsp salt and cook the butter until brown and toasty over medium heat.
  • Remove from the heat and add marshmallows. Stir consistently until marshmallows begin melting. Once marshmallows have started to dissolve, add 1 Tbsp blue food coloring, and add pot back over low heat and continue stirring until fully melted.
  • Crush 1½ cups of Rice Krispies. I just roughly crush them in my hand as I add them to the melted marshmallows.
  • Stir so everything is evenly coated. Add the remaining ¼ tsp salt and add the remaining 1½ cup Rice Krispies and mix until everything is coated evenly.
  • Don’t use your hands, the marshmallow may be hot! Using another piece of parchment paper, or the flat bottom of a glass, press lightly into the corners and flatten the treats. You can also lightly dust your surface with cooking spray to help keep it from sticking.

  • Wait a few minutes for the treats to cool enough to handle. Use your hands to break the chocolate chip cookies, oreo cookies, and birthday cake cookies. Scatter them across the top of the rice krispies treats and press firmly into the gooey treats. Add candy eyes, if using.
  • Allow treats to set for at least an hour before cutting into squares and serving.
