This recipe for chocolate strawberry rice krispies treats is a delicious way to spruce up a tasty classic, and make them even better. Take a gooey, chocolatey rice krispies treat made with cocoa krispies, and then add dehydrated strawberries. Dehydrated strawberries pack a punch of strawberry flavor that’s hard to beat. I also love to add Brookside chocolate gems for an extra pop of texture and flavor.

I like the fruity, chocolately flavor and chewy flavor of adding Brookside chocolate gems, but if you don’t have any–mix in chocolate chips! You can’t go wrong with classic chocolate.

Have you used dehydrated fruit before? When I first encountered dehydrated fruit in a recipe, I didn’t even know where to look to find them. My go-to for dehydrated strawberries is Trader Joe’s. They have a good spread, and you’ll find them in the nuts and dried fruits section. I honestly don’t even know what aisle to get them at the regular grocery, although I’m sure they exist. But because they’re dried and dehydrated, they keep for a long time, and I’ll just add them to my list if I’m going to Trader Joe’s.

You’ll need dehydrated strawberries for these treats. You can’t substitute fresh strawberries for the dehydrated, because they’ll have too much moisture and the heat will make them expel their juices. You’ll end up with a soggy cereal bar that will not be ooey-gooey deliciousness. Trust me, no one will want that. Plus, an additional benefit of dehydrated strawberries is how concentrated the flavor is! With dehydrated strawberries, the strawberry really shines through in these chocolate strawberry rice krispies treats.

You’ll also need cocoa krispies for these chocolate strawberry rice krispies treats. I mean a chocolate base is an obvious must! Of course, there’s nothing stopping you from using traditional rice puffs, but chocolate is always the best. Chocolate marshmallow is such a classic combination. The chocolate background really makes the strawberry flavor pop. You could also use plain rice krispies instead of cocoa krispies if you have some around, but of course, I’m going to reach for the chocolate option!

You can always swap out the cocoa rice krispies for regular plain rice krispies if you want more of a vanilla bar studded with chocolate and strawberries.

The key to rice krispies treats is the correct ratio of marshmallows to dry treats. You want that perfect gooey, stretchy pull but don’t want it to be overly chewy. You don’t want to wear out your jaw. I find that the recipe that comes on the box is missing the appropriate amount of marshmallows. It’s not bad per se, just this recipe is wayyyy better.

Especially because marshmallows in a homemade rice krispies treat just have more heft than the premade ones you buy at the store. They’re so different, freshly made treats vs. prepackaged. I infinitely prefer fresh homemade ones, though it’s not like I’d be upset to eat a prepackaged one. But if you have all the ingredients, rice krispies treats aren’t a huge investment.

Plus this recipe is a small batch recipe, which means I’m not stuck eating rice krispies treats for weeks on end. This recipe makes 8 chunky, delicious strawberry chocolate rice krispies treats. But of course, it’s easy to double the recipe if you want to share. I’d press the treats into an 8×8 pan if you’d like to double it.

Ingredients

  • 3 Tbsp butter
  • 3 cups chocolate puffed rice cereal
  • 8 oz marshmallows (~⅔ bag of large marshmallows)
  • cup dehydrated strawberries
  • ¼ cup brookside chocolate candy (recommend the acai blueberry, but any flavor will do)

Instructions

  • Prepare a loaf pan by spraying lightly with cooking oil and lining with parchment paper so the paper sticks to the pan. Then lightly spray the parchment paper to prepare for the treats.
  • Roughly chop or crush the ⅓ cup dehydrated strawberries and add to a large bowl. Measure out 3 cups chocolate Rice Krispie treats.
  • Melt 3 Tbsp butter in a medium pot. Remove from the heat and add marshmallows. Stir consistently until marshmallows begin melting. Once marshmallows have started to dissolve, add pot back over low heat and continue stirring until fully melted.
  • Add the chocolate Rice Krispies and dehydrated strawberries. Stir so everything is coated.
  • Pour half the mixture into the prepared loaf pan. Scatter half the brookside chocolate candy throughout then layer on the remaining treat mixture.
  • Don’t use your hands, the marshmallow may be hot! Using another piece of parchment paper, or the flat bottom of a glass, press lightly into the corners and flatten the treats. You can also give a light dusting of cooking spray to your surface to help keep it from sticking.
  • Press remaining brookside chocolate candies into the top of the rice krispie treats. Allow to set for at least an hour.
