Everyone needs a perfect, homemade brownies recipe. Perfectly fudgy but still firm, with a crinkly chocolatey top. Homemade brownies are the perfect dessert, whether you serve them on their own, with ice cream or with any other toppings you can imagine! I love to serve them warm from the oven (or popped in the microwave) with ice cream over top. The contrast of textures and flavors and the warm brownie and cold ice cream makes for perfection. Although I also love serving brownies plain with homemade salted caramel sauce and a few walnuts too.

Brownies are so versatile, and provide the perfect chocolate base for dessert. Don’t get me wrong, boxed brownies definitely have their place in my kitchen. But homemade brownies…you’ll be surprised, these honestly don’t take much more time to prepare! And in my opinion you can definitely taste the difference. They just taste more…chocolatey. And you know I’m all about the chocolate.

There’s a couple things that make this recipe so great. One of them is the coffee granules. It’s present in such small amounts that it doesn’t really make the brownies taste like chocolate, but instead adds an earthy depth of flavor to the chocolate. There’s a reason mocha exists and that’s because chocolate and coffee flavors complement each other really well. I honestly don’t go fancy on the coffee, but that’s because I don’t make my own coffee. Use whatever you have around, but don’t skip it!

The second ingredient is salt. I’m a firm, firm believer that salt is the secret ingredient that makes desserts pop from good to WOW! It also serves to complement the sweet flavors and provide some balance to all the richness in homemade brownies. I adapted halfbaked harvests’ brownies recipe to a staple I’ll keep in my recipe book forever. And one of the main additions I made was salt. It just gives that savory mouthwatering quality to a very rich, very delicious dessert. In my opinion, it takes a great recipe and makes it even better.

Have you ever wondered what makes the crinkle top that gives brownies the perfect texture? I’ll tell you what it is–real chocolate. Cocoa powder is great for dense, delicious, chocolate flavor. But it’s the real chocolate that makes that thin thin layer of crispy homemade brownie goodness form on top of your brownies. That crust is essential to keeping your brownie moist and together for a decadent bite.

secrets to success;

  • For extra pockets of chocolate, reserve ½ cup of chocolate chips and only melt 1½ cups with the butter. Then fold the ½ cup of chocolate chips into the batter right before pouring into the baking dish. Then you’ll have chocolate chip homemade brownies.
  • Even though it’s present in small quantities, don’t skip on the coffee! It adds a complexity to the batter that you definitely won’t get in boxed brownies
  • Check the brownies with a toothpick. Insert it into the center of the brownie pan and see if it comes out mostly clean. If the brownies are underbaked, you’ll see the batter stick to the toothpick. I like to insert the toothpick in the same place to minimize holes in my crinkly top.

Ingredients

  • 1 cup salted butter (2 sticks)
  • 2 cups semisweet chocolate chips
  • cups granulated sugar
  • 1 tablespoon vanilla extract
  • 1 teaspoon salt
  • teaspoons instant coffee granules
  • 4 large eggs at room temperature
  • ½ cup all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking powder

Instructions

  • Line a 9"x13" pan with parchment paper. Spray with oil and set aside.
  • In a large bowl, add 2 cups of semisweet chocolate chips and 2 sticks (1 cup) of butter. Microwave in 30 second increments until the butter is melted and the chocolate chips begin to melt. Stir together until melted and smooth.
  • Add 1½ cups sugar, 1 Tbsp vanilla, 1 tsp salt, and 2½ tsp coffee granules to the melted chocolate. Mix together to combine.
  • In a small bowl, add 4 eggs and whisk together until frothy and bubbly. Fold the scrambled eggs to the chocolate mixture.
  • Add ½ cup flour, ½ cup cocoa powder, and 1 tsp baking powder. Stir to combine. Do not overmix.
  • Evenly spread the mixture into the prepared baking pan. Bake for 28-30 minutes or until the brownies are just set. Test the center with a toothpick, it should come out clean when they're ready.
  • Allow to cool before cutting and serving fresh. Try popping them in the microwave for 10 seconds to reheat and serving with ice cream!
