Make yourself a delicious, buttery, easy fruit cobbler right at home. I love that rustic, easy look that means no prep, no stress, just quick and easy dessert. Anyone else love fresh fruit but have a bad habit of sometimes letting it get past it’s prime? -Raises hand- It’s me.

Some days I bring home raspberries and eat them all within the day. Sometimes I tell myself to spread them out throughout the week and they get slightly mushy or just don’t look quite as appealing. They’re not bad yet–but they just look less fresh and a little limp. Well, easy fruit cobbler to the rescue!

This recipe is perfect for fruit that’s overripe. In fact, being overripe will add natural sweetness to your cobbler and make it extra delicious!

This recipe is perfect for fruit that’s overripe. You know, those berries that aren’t bad yet–but somehow they’re not as luscious and bright red as when you took them home on the weekend. When you bake them and toss them with buttery oat crumble, you won’t even notice. In fact, being overripe will add natural sweetness to your cobbler and make it extra delicious!

I’ve made this easy fruit cobbler with a variety of fruit–raspberries, strawberries, and peaches as pictured here. Even some mixed berries. You can even used canned fruit in case you get a craving for easy fruit cobbler and your fruits really are past their prime.

This recipe for easy fruit cobbler is an old classic, but still a goodie. I published this recipe first in 2016, less than a year after I started my blog (named tipsychocochip at the time. It’s since got a glow-up as Best with Chocolate). Around the same time, one of my fellow Bucknellians from my alma mater started her blog Dela Darling and did a shout out post to my blog!

I love her site, it’s fresh and clean with a bright pop of color, and you can read all about her lifestyle in Delaware. Everything from fashion to The Bachelor, to finances, and even a few recipes! Obviously recipes are not the only focus there, but I wanted to try out her easy strawberry cobbler. She’s since streamlined her website so the recipe is no longer available, but lucky for you and me, I have the recipe saved. And I’m glad I do, since this easy fruit cobbler is clearly a recipe I’m still making over 5+ years later!

Easy peach fruit cobbler

The “easy” label in the recipe is no joke.  Like my apple pie crescents or mediterranean pinwheels recipes, easy fruit cobbler is really a breeze to make. It does take 25-30 minutes in the oven to bake, but the prep work is so simple, and I often pop it in the oven while we eat dinner so it’s ready, hot, and fresh for after we clear the table.

And of course we add ice cream.

Easy fruit cobbler is also great to make ahead or serve to guests. I ended up making it last minute for a visit with one of my best friends when our plans got interrupted. We originally had plans to go to a hibachi restaurant, because that’s one of our go-to dinner-dates to catch up. Unfortunately we had to work late, and opted for easy and relaxed instead of dressing up for a long and late dinner. We just sipped on some wine we had from great shoals winery (read the review!), and chatted away in the comfort of my home! And of course we added ice cream.

Ice cream is not required, so you could skip it. But I really think the creamy sweet coldness of vanilla or chocolate ice cream goes well with the fruit flavors. Keep the flavors simple and let the natural flavor of your fruit shine through each bite.

The thing with simple recipes is that I constantly think of additional things to add to them. This time, I added pecans which add a toasty nuttiness to the cobbler and complements the sweet peach flavor. When it comes to strawberries, I’ll often add a blend of strawberry and raspberries, or if I think ahead I’ll pick up some rhubarb and go for a strawberry rhubarb for a more tart cobbler.

Then comes the ice cream. I think simple is best, so I often go for vanilla (french vanilla is my personal favorite). But chocolate ice cream is always a win, or for a slightly elevated dessert, find a good salted caramel ice cream. I did try a peanut butter flavored ice cream with the strawberry version of the cobbler once, and I have to admit it was not my favorite. Though there’s some peanut butter lovers in my family that might disagree. It does give a bit of a peanut butter & jelly taste if that’s your jam. Jam–get it?!

Easy fruit cobbler is so versatile, you can try it with whatever fruit you have. I’d love to try it with pears for something a little different (I just bought pears, so that’s probably why it comes to mind.) Or blueberries. My husband prefers other berries to “bloobs” as I like to call them, so I haven’t tried it myself. Apples would probably work as well, but they might need more time in the oven, since I’ve tried jucier fruits and berries so far.

Try this easy fruit cobbler with different fruits! I’ve had delicious success with strawberries, raspberries, and peaches. Or try pears or blueberries.

Ingredients

cobbler;

  • cup sliced or diced fruits (try peaches, strawberries, raspberries, or a blend of your favorite berries)
  • 1 Tbsp flour
  • 1 Tbsp sugar (try brown sugar for a heartier flavor–pairs amazingly with peaches)
  • ¼ cup pecans or other nuts, chopped (optional)

oat crumble;

  • ¼ cup oats (whole grain, or instant will work fine too)
  • ¼ cup flour
  • 1 Tbsp sugar (or brown sugar)
  • 2 Tbsp butter melted
  • ice cream or other toppings, for serving (optional)

Instructions

cobbler;

  • Slice or dice your fruit into roughly ½" chunks or slices and add to small bowl. If using optional nuts, roughly chop and add to the same bowl.
  • Add in 1 Tbsp flour, 1 Tbsp sugar, and toss until evenly coated.
  • Spread the fruit mixture evenly between two small ramekins.

oat crumble;

  • Melt the 2 Tbsp butter in a medium microwave-safe dish.
  • Add in the ¼ cup oats, ¼ cup flour, and 1 Tbsp sugar and use a fork to mix together until it holds together in clumps.
  • Top each ramekin with half the crumble mixture.
  • Place both ramekins on a parchment-paper lined baking sheet (if they're stuffed full they may bubble over), and bake 30 minutes.
  • Remove from the oven and allow to cool for 10-15 minutes before serving. Top with ice cream or other garnishes (chocolate sauce, sprinkles, etc.) if desired.
