There are certain appetizers that just scream sports to me. And buffalo chicken dip is one of those classic staples that never go wrong at a Superbowl party. (Or any party in general, really, no sports required.) But come Superbowl Sunday, or that crazy finals game you’re dying to watch, buffalo chicken dip is never a bad choice.

This buffalo chicken dip is spicy, creamy, cheesy, and has enough protein to keep you satisfied. Make your own shredded chicken from scratch, or skip a couple steps and use pre-shredded, or rotisserie chicken to speed up this dish. Making shredded chicken keeps it flavorful, moist, and you can shred to the perfect consistency. It’s really not hard, it only takes chicken, chicken broth, and salt and pepper for seasoning.

When ready to serve, pop it in the oven at 350° for 25 minutes, then check the temp before broiling off the top.

When it comes to hot sauce, you can’t go wrong with Frank’s Red Hot. There’s a reason it’s essentially synonymous with buffalo sauce. I use Frank’s Red Hot as the base. But what I really like to do is add a little drizzle of sriracha on the top just before serving. Firstly, it reminds people that buffalo chicken dip is HOT. And secondly, it adds a splash of red to the orangy, cheesy dip.

What are your favorite cheesy dip dippers? Mine are usually crackers, because you need something neutral to cut the richness of the buffalo chicken dip. But I also love some sweet bell peppers for a little sweetness to offset the heat of the spicy buffalo sauce.

You can also try bagel chips, since their bready texture tends to hold up well to this thick dip. Bread works fine, but you’ll want to toast it or choose a firm crumb. You want to support your guests’ hefty swipe through the buffalo dip. Or your own. Trust me on this one.

Ingredients

shredded chicken;

  • 2 large chicken breasts
  • ½ cup chicken broth
  • 1 Tbsp oil
  • salt & pepper for seasoning

  • 6 oz cream cheese
  • 4 Tbsp sour cream
  • 3 Tbsp butter
  • 1 Tbsp garlic powder
  • 1 cup Frank’s red hot
  • 2 cups shredded cheddar cheese
  • ¼ cup Parmesan cheese

Instructions

  • In a large skillet add 1 Tbsp oil. Heat over medium heat
  • Season the chicken breasts with salt and pepper. Once the skillet is hot, add the chicken and sear, cooking for about 5 minutes on the first and 3 minutes on the second side.
  • Add the broth to the pan and cover with a lid. Simmer 8-12 minutes or until chicken reaches an internal temp of 160 degrees. During the last 2 minutes or so, remove the lid and let the liquid boil away.

  • While chicken is cooking, into a measuring cup, measure out 1 cup franks hot sauce. Then add 1 Tbsp of garlic powder, and cut 6oz of cream cheese into cubes and add that
  • Turn off the heat and remove the chicken from the pan. Using two forks, shred. For thinner chicken shred with the grain, raking through with a fork. If you prefer chunkier chicken, consider cutting into cubes with a knife.
  • Using the same pan that has the brown bits from the chicken, turn the heat to medium low. Add in 2 Tbsp butter and stir as it melts, scraping up the brown bits from the pan.
  • Add in the measured hot sauce and cream cheese, stirring as it melts. Add in the shredded chicken and mix until evenly combined and cheese is melted.
  • Once homogenous remove from the heat. Stir in sour cream and 1 cup cheddar cheese and ¼ cup Parmesan cheese. Stir until melted.
  • Transfer to a heat-safe dish and crumble remaining butter over the top. Sprinkle with remaining cheese. Optional, drizzle extra hot sauce over the top.
  • Set the broiler to high, and broil for 1-2 minutes or until bubbly and charred. Remove and serve hot! Serve with celery, carrots, and sliced bell peppers or go with the carbs and lay out chips and crackers.
