An adorable hand-held appetizer, and even healthful to boot!  A southwest blend of vegetables in crisp wonton cups make for a festive appetizer to any party!

I’ve always seen wonton cup appetizers, but I’ve never really dabbled, and this was a great forray into the realm! Plus it’s perfect timing, because by the time you’re reading this, I’ll be at Tyler’s family reunion where there’s sure to be good food, good conversation, and good people!  You can really fill these cups with pretty much anything, but I was going for a healthful appetizer, and for quick, and thus actually cheated and used a steamable blend of frozen vegetables.

But fear not because I’ve included a recipe to make a good alternative if you prefer the from-scratch route!  Plus I went with a mini-muffin tin rather than a regular muffin tin because they’re cuter as tiny little bites, and because it stretches the wonton squares a bit farther as well.

Of course the cups can be filled with whatever you desire!  Brie and fig jam would be delicious, or seasoned shrimp with cilantro.  But like I said, quick and easy does the trick when you’re planning multiple foodstuffs for a party.
