Luscious pumpkin spice muffins, with extra luxury and festivity added from seasonal pumpkin spice choco-chips!
Will the pumpkin police come arrest me for posting a recipe for pumpkin spice muffins in a month unrelated to fall?! I’m not sure, but I’m braving the waters to share this with you! Part of the reason being a coworker requested these for her birthday, and partially because I dug up the pumpkin spice chips and had leftover pumpkin from trying to help my dog out with some tummy troubles.
These luscious pumpkin spice muffins are made with actual pumpkin and extra festive with pumpkin spice chips! The pumpkin spice chips are going to be a seasonal item, so pin this recipe for later and keep an eye out for the shelves to start getting stocked in fall.
Pumpkin spice chips are going to be a seasonal item, so stock up when you see them on shelves this fall!
If you’re making these pumpkin spice muffins now, out of season, I would swap white chocolate chips if you can’t find the good stuff. You don’t have to use pure pumpkin spice chips either, I’ve seen white chocolate pumpkin truffles some years as an alternative.
You can always go to something like handy dandy amazon to find the OG pumpkin spice chips or hit up regular grocery stores for white chocolate chips, butterscotch chips, or if you can find them, cinnamon chips. Not quite the same “beat you over the head with pumpkin spice” but you know, not everything has to drown in pumpkin spice.
Stumped by pumpkin spice chips? Check amazon, or swap at your local grocery store for white chocolate chips, cinnamon chips, or butterscotch chips.
The best part of these pumpkin spice muffins is the pumpkin itself. It packs nutrition, fiber, and flavor, not to mention keeping the muffins themselves moist. Because they are moist though, be careful storing them for more than a few days.
To keep these moist muffins freshest for the longest time, store in an airtight container in the fridge.
To keep them freshest for the longest, store them in an airtight container in the fridge. The cold will help combat mold and keep them moist as you eat them. I would be wary of them after a week on the counter for sure, but the good news is, they rarely last a week!
in case you’re confused what pumpkin spice chips are, see the picture below. I’ll admit this bag was purchased in 2017, so packaging or branding might have changed.
The original name of my blog when I launched it was tipsychocochip, so of course I feel obligated to buy and try every different chocolate chip flavor I find. I’ve tried everything from coffee, to mint chip, to unicorn vanilla. These pumpkin spice chips are a solid A rating. They’re sweet but pack a hint of spice. Give me a good semisweet any day; but then I’ve never been a die-hard PSL girl.
I love that these pumpkin spice muffins are a classic recipe, but the pumpkin spice chips make it fun and fresh with a little extra flavor. And not a whole lot of extra work for the pop of color and spice! They’re a nice twist on a classic, or if you are a pumpkin spice fiend, this recipe is for you!
