I pose you this question: If I make a snickers brownie pie, and eat the entire pie before my relatives arrive for the holiday, did the pie exist? I honestly didn’t expect to go ga-ga over this pie. I mean, don’t get me wrong, I’m not in the habit of making recipes I dislike, but it shocked me just how much I loved this pie.

Of course, starting with a brownie base in a flaky pre-made pie crust–you already know you can’t go wrong. Topped with the easiest two-ingredient filling that’s soft but chewy for a makeshift nougaty, extra peanut buttery layer. And then topped with caramel, peanuts, and chocolate, It’s a peanut butter chocolate caramel delight all in one bite.

I mean, I guess the commercial success of Snickers should have been an obvious win. But crazy for crust’s recipe takes all the textures and flavors of a Snickers bar, amps up the peanut butter, and makes for one delicious pie. I only tweaked the recipe slightly, adding extra fluff and extra caramel because, well, you can never have too much of a good thing.

I use a frozen pre-made (GF) pie crust and pour the brownie batter right in. Such a quick and easy win!

For the pie crust, you can use whatever you prefer. Pastry sheets, frozen crusts, make your own from scratch. For my snickers brownie pie, I used the frozen pre-made pie shell from Trader Joe’s and while it’s a little bit fragile, it tastes lovely and is an easy win. You just mix your brownie batter and pour it right in. Though honestly, I think you could even skip the pie crust if you wanted. It’s a convenient shell to hold everything together, but in terms of flavor, it gets a little outclassed by chocolate and peanut butter.

I like to leave some streaks of peanut butter in the two-ingredient “nougat”.

The star of the snickers brownie pie is the two-ingredient “nougat”–just marshmallow fluff and peanut butter mixed together. I’ve always heard that peanut butter fluff sandwiches were good, but I can’t say I’ve actually tried one. I mix the two ingredients together, and while you can mix until thoroughly combined, I like to leave some streaks of peanut butter in the mixture. I think it looks nice, not that you’ll even really see it when you cover the pie in caramel peanuts and chocolate.

I like to mix in salted peanuts for a little hint of salty in this sweet bomb of a pie.

When it comes to the caramel peanut topping, you have choices for caramel. You can make your own caramel sauce, but it does take some planning ahead. Alternatively, I just use Kraft caramels, which are quick and easy and have a delicious chew. Using Kraft caramels takes a little bit of patience and some stirring to get them all melted. Once melted though, you can add in the peanuts. I like to mix in salted peanuts for a little hint of salty in this sweet bomb of a pie.

Be warned: the caramel is drippy and will spread all the way to the edges or past. I recommend putting your pie on a baking sheet or parchment paper–something easy to clean. Because you spread the caramel to the edges of the snickers brownie pie, inevitably a bit will drip off the sides. Just use a finger or a knife to swipe the drips off the edge as it’s cooling and no one will be the wiser. But do yourself a favor and prepare with a sheet pan or paper so you’re not scraping caramel off your countertops.

And then of course, you have to finish out the snickers brownie pie with more chocolate. You can use candy melts, or chocolate coating (like Ghirardelli), or even chocolate chips mixed with a little vegetable shortening or coconut oil. Here I used chocolate coating I had around from my holiday truffles, but if I didn’t have that on hand I would add ~½ tsp of coconut oil to a ½ cup of chocolate chips.

Ingredients

brownie pie;

  • ½ cup unsalted butter , melted
  • 1 cup sugar
  • 2 tsp vanilla extract
  • ¼ tsp salt
  • ¼ tsp baking powder
  • 2 eggs
  • ½ cup cocoa powder I prefer dark chocolate or dutch processed
  • ½ cup flour (I use measure-for-measure gluten-free)
  • 1 9-inch pie crust (I use Trader Joe's gluten-free)

  • 8 oz marshmallow fluff (I prefer 8oz, but can use one 7oz jar if preferred)
  • 1 cup smooth peanut butter

Instructions

  • Melt ½ cup butter in a medium bowl. To it, add 1 cup sugar, 2 tsp vanilla extract, ¼ tsp salt, and ¼ tsp baking powder. Mix together until thoroughly incorporated.
  • Make sure the butter is not too hot and add 2 eggs, and mix until combined.
  • Add in ½ cup cocoa powder and ½ cup flour and mix until thoroughly combined.
  • Pour the brownie mixture into your 9" pie crust. Bake at 350°F for 20-25 minutes or until a toothpick inserted in the center of the pie comes out clean.
  • Remove pie from the oven and allow to cool to room temperature.

  • In a large bowl, combine 8oz marshmallow fluff and 1 cup smooth peanut butter. Fold together to desired consistency–I like to leave streaks of peanut butter throughout the mixture.
  • Make sure your pie is cool, then add the peanut butter filling on top of the brownie mixture. Use a spatula to help shape the pie as desired (I like the center to dome a bit).

chocolate caramel topping;

  • In a medium, microwave-safe bowl, add 20 unwrapped caramels. Add 2 Tbsp of milk and microwave in 30 second increments, stirring in between, until caramel is melted.
  • Add ½ cup of salted, shelled peanuts to the caramel, and mix until peanuts are thoroughly coated in caramel.
  • Pour the caramel mixture over the top of the peanut butter filling, using a spatula or spoon to spread out as desired.
  • Melt the chocolate candy coating in the microwave in 30 second stints, stirring between each until melted. Drizzle chocolate over top of the pie in your preferred pattern.
  • (Optional) Sprinkle with flaky salt for an extra dash of saltiness.
