s’mores truffles;

Truffles truffles, it’s truffle season! And the new flavor I came up with is a new favorite: s’mores truffles! I have very much been on a s’mores kick lately. My favorite ice cream flavor is s’mores, I found a new s’mores snack mix that I love, and so it seemed only right to make a s’mores truffle for the holidays!
The s’mores flavors are just classic: a combination of graham crackers, marshmallows, and chocolate is just not something you can go wrong with. When it comes to graham crackers I always have to choose Nabisco (not sponsored, just my honest opinion). Other brands just don’t have the same sweet flavor, in my opinion. Golden grahams can also work, but they’re extra sweet and sugary. If you really want the best flavored graham crackers, try making your own! These oat flour graham crackers have a delicious flavor that the storebought stuff just can’t beat.
If I’m using a full sleeve of graham cracker crumbs (roughly 1¼ cups), I actually crush the crackers with my fingers while still in the packaging. Sometimes I’ll use a food processor, but a lot of times I don’t want the extra dishes. And graham crackers are brittle and pretty easy to crumb with your fingers.
Then add your marshmallow fluff and your mini chocolate chips and mix, mix, mix. I recommend using a spatula and smearing the fluff repeatedly to make the fluff catch all the crumbs slowly as you mix. Fluff is sticky! Finding the right balance of fluff to crumbs is surprisingly hard. It has to be sticky enough to hold together, but not so much that you can’t roll it into balls. Lucky, I did the taste testing for you!
Still, I have some tips to help with rolling these sticky little truffles. First, wash your hands–they will get sticky. Secondly, you want the filling balls for these s’mores truffles to hold together, but don’t compact them too much. The first time I made these s’mores truffles I packed those balls a little too tight. You want them to have a nice gooey chew once they’re coated with chocolate. Wash your hands as needed throughout the process to reset the sticky marshmallow on your palms.
If needed, you can pop the filling in the refrigerator for a few minutes to chill. It will help firm up the marshmallow fluff a little and may help make it easier to roll. I set out my filling balls on parchment paper, since the parchment paper won’t stick. You can always tidy them up at the end after all the filling is rolled.

s’mores truffles
Ingredients
- 1¼ cups golden grahams or graham crackers crushed
- 7 oz marshmallow fluff (approx. 1½ cups)
- 1 cup mini chocolate chips
- ¼ tsp salt
- 3 Tbsp dehydrated mini marshmallows (optional)
- 12 oz milk chocolate for melting
- truffle toppings; try crushed graham crackers, sprinkles, or dehydrated mini marshmallows
Instructions
- Crush golden grahams into fine crumbs by hand or using a food processor.
- Add crumbs to a medium mixing bowl, and break up any remaining large pieces.
- Add the mini chocolate chips, salt, and marshmallow fluff. Optionally add the dehydrated marshmallows. Mix until well combined.
- Roll the mixture into balls just under 1” in diameter. Take care not to compact the mixture too much to keep a pleasant chew. Place balls onto a parchment paper lined baking sheet.
- Melt chocolate according to package instructions. Coat truffles with chocolate and then return to parchment lined cookie sheet.
- Sprinkle immediately with any desired toppings, then let harden and enjoy!
