I know it’s only just barely fall and I feel like I’m pulling out all the fall-themed recipes already! I’m not actually doing it on purpose, I’m just enjoying the comfort food aspect of my slow cooker! And I thought these microwave cinnamon apples would pair amazingly with the crockpot chicken and stuffing recipe I posted last week (it’s a versatile recipe!), and when I didn’t have apples I was sad. So they stayed on my mind, and I made up for it by serving them with the everyday thanksgiving sandwich.
A good sweet side dish, although I didn’t think to cut of the skins before I started microwaving them, which I think I’ll do next time. It boils down to personal preference though, some people like the skins, and some people don’t. You lose some of the nutrients when losing the skin, but it’s still better than skipping fruits and veggies all together! I like to keep them on if I can, like in italian roasted potatoes since the italian flavor permeates everything regardless of skin or not, but on these cinnamon apples I think I prefer the skins removed.
There are recipes out there that are more complicated than this and include ingredients like cornstarch, brown sugar or sugar, nutmeg, etc. You’re welcome to spruce this puppy up! But I personally like the simplistic and delicious nature of the two-ingredient side dish. It’s literally straight apples, tastes just as good without being overly sweet for a side dish (rather than a dessert), and is guilt-free!
