I’m still amazed sometimes by how far I’ve come on the spice spectrum.  5 years ago–even 3 years ago, I never would have touched anything spicy.  And now I can tolerate what I find to be a reasonable amount of kick in my dishes.  I’m still a wimp on the grand spectrum for sure, but what I love about making dishes yourself is that you can control the spice.

Jalapeno Poppers is definitely a dish I never would have touched.  But the fact is when making your own you can add as many or as few of the seeds as you like for a perfectly personal spice balance.  Plus there’s always the possibility of creativity in the kitchen!  I was loosely following Sherron’s jalapeno popper recipe over at simply-gourmet, but I had half a can of sweet corn opened from the previous night.  So of course I had to throw it in.

And I even got compliments from the friends we had over how much they liked the corn!  Even though I only added it on a whim, in retrospect it makes so much sense.  There’s various hot corn dips that are delicious, and jalapeno poppers are delicious, so it makes perfect sense that together they make one epic dip!

Ingredients

  • 1 large jalapeno
  • 4 slices bacon
  • cups sweet corn canned or defrosted if using frozen
  • 2 cups cream cheese
  • cups pepperjack cheese
  • ¼ cup diced scallions
  • pita chips, potato chips, or veggies, for serving

Instructions

  • Dice jalapeno and set aside. Reserve more seeds for spicier kick.
  • In a pan over medium-high heat, cook the bacon until crisp. Remove from pan to a paper-towel lined plate to drain.
  • Remove excess bacon grease from the pan, then add in corn. Toast 1-2 minutes until just beginning to brown.
  • Add in diced jalapenos and stir around to cook approx. 30 seconds
  • Add in cream cheese and stir around until evenly melted. Add in pepperjack cheese and stir to melt.
  • Remove pan from heat. Crumble bacon and add ⅔ directly to pan. Mix together until combined.
  • Remove to serving dish, and top with remaining bacon and scallions. Serve with chips or veggies.
