Stuffed chock full of chocolate sandwich cookies, and if you want that extra classic crunch—press the Krispie treats into extra Oreos.
One of the great things about cookies and cream Rice Krispie treats is that the ingredients are simple. Cookies and Cream Rice Krispies treats are pretty gluten-free friendly. Puffed rice cereal is already rice so no gluten there. Plus most marshmallows are gluten free, though you can double check your brand if you’d like. Of course go for the classic cookie if you don’t need to adhere to dietary restrictions. Or even swap in your favorite limited edition flavor—I’ve seen a caramel brownie flavor around that would be a yummy substitute.
The key to any Rice Krispie treat as I always say, is the right ratio. You need extra marshmallows to get that pillowy, chewy, amazing homemade texture. It just doesn’t compare. So make sure you get all them marshmallows and don’t leave a one out! You’ll thank me in the end.
Another secret to the perfect cookies and cream Rice Krispie treat? Make not to pack down the Rice Krispie treats too much. picking down means denser treats. When they’re too dense it takes away from that light, easy-to-eat treat. You want to get that marshmallow stretch when you pull it apart. You don’t want to hurt your jaw biting into your gluten free rice krispies treats. Plus I like to crush up some of the rice krispies so they have just a little bit of density.
I also got fancy this time and tried some different shapes for my treats. In addition to squares, I did sticks and even bite sized cubes! No matter how you serve yours they’re all delicious, I swear. But I kind of like the single bites. Making anything smaller automatically makes it cuter.
I like to press oreos into the tops of the treats itself so you get big chunky cookies and cream flavor. The marshmallow flavor is great, but it’s the cookies and cream that sets these delicious treats over the edge. Gluten free oreos can be a little more crumbly than regular ones, so expect some crumbs. Or try different flavors! There’s birthday cake oreos or one of their seasonal flavors like cinnamon bun or carrot cake.

- Try out some different shapes! I really like bite sized cubes, or matchsticks in addition to the traditional squares. Or get fancy with your cookie cutters! Grab a heart for Valentine’s Day or a tree for Christmas. It can be a great kids activity—plus you know someone’s gotta eat those scraps! (I volunteer as tribute.)
- Marshmallows are key! For ooey and gooey, make sure you follow the recipe and add the marshmallows. It seems like a lot but it makes for the best treats.
- To go gluten free, opt for gluten free Oreos. I honestly couldn’t taste the difference in these cookies and cream Rice krispies between regular and gluten-free Oreos.

Ingredients
brown butter rice krispie treats;
- 3 cups puffed rice cereal (Rice Krispies)
- 3 Tbsp salted butter
- ¾ tsp birch salt (alternative, kosher salt)
- 8 oz large marshmallows (¾ bag of jumbo marshmallows)
- 15 gluten-free oreo cookies
Instructions
- Prepare a loaf pan by spraying lightly with cooking oil and lining with parchment paper so the paper sticks to the pan. Then lightly spray the parchment paper to prepare for the treats.
- Set aside 5 oreos then chop or crush the remaining 10 oreos and set aside..
- Melt 3 Tbsp butter in a medium pot. Add ½ tsp salt and cook the butter until brown and toasty over medium heat. You want the butter to be brown and you may see brown bits floating.
- Remove from the heat and add marshmallows. Stir consistently until marshmallows begin melting. Once marshmallows have started to dissolve, add pot back over low heat and continue stirring until fully melted.
- Crush 1½ cups of Rice Krispies. I just roughly crush them in my hand as I add them to the melted marshmallows.
- Stir so everything is coated. Add the remaining ¼ tsp salt, remaining 1½ cup Rice Krispies, and the crushed oreos and mix until everything is coated evenly.
- Don’t use your hands, the marshmallow may be hot! Using another piece of parchment paper, or the flat bottom of a glass, press lightly into the corners and flatten the treats. You can also give a light dusting of cooking spray to your surface to help keep it from sticking. Press the remaining 5 oreos into the pan
- Allow treats to set for at least an hour.
