So I’ve seen recipes for “cauliflower” substitute everything recently on pinterest (click for my tipsychocochip board on pinterest!), and to be honest I’ve been fairly skeptical.  But I have been trying to eat healthier lately and I wanted a grilled cheese sandwich, so I figured if I was going to stoop, maybe I’d try the cauliflower bread.  This is another recipe where this 1.5 c. food processor comes in handy!  Just enough to make one or two servings without unnecessary cleanup!

It was surprisingly tasty actually.  More akin to a bread-like texture than I thought, and definitely not bad smothered with cheese.  This original recipe for Cauliflower Crust Grilled Cheese came from Mike at the Iron You, and it’s pretty simple.  I didn’t have mozzarella cheese, so I actually used Parmesan cheese instead of the mozzarella.  I don’t think I’d eat this straight, but I do see where it’s a pretty decently yummy pizza crust substitute, or for example, a grilled cheese.  I also made fairly small pieces of “bread”, so my bread was a little well done even at the 10 minute mark, so I suggest checking your crust at regular intervals until you get a handle on your particular thickness and oven.

This grilled cheese was definitely yummy!  This time I used gouda cheese, toasted pine nuts, and caramelized onions.  I’ve also used pepperjack cheese and grilled onions before.  I had T try this and he could not have told me that it was made from cauliflower.  And the best part is that this really isn’t too hard or time intensive.  Definitely more time intensive than picking up a slice of bread, but not bad in terms of a recipe.

Now I will note that while this recipe specifies “2 servings”, that it’s really 4 pieces of fairly small bread.  I would say about index-card sized, since that is a fairly good portion size when you’re trying to portion control.  Now that said, it’s easy to scale this up or down according to your needs and tastes, and it really comes down to how much cauliflower you have.  Sometimes I wonder if things that taste good are really “healthy”, but I think this is a wonderful way to get some more veggies into your diet with a little cheesy help!
