    I’ve been on a health kick.  Trying not to overeat and trying to make healthier choices.  But foooooood is so yum, it’s hard.  BuI found these baked southwest egg rolls and thought they’d be super tasty!  With some salsa and fresh guacamole on the side, they make for a nice fresh dinner or a perfect appetizer!  I didn’t have black beans, so I just used pinto beans instead.  I imagine it’d be fine either way, just use whatever you prefer or have on hand!     These are yum and fun to pull out!  I found that the recipe I used (see below) was actually a bit sweet, and judging by my taste-test of the batter, I think the cookies lost some of their cake-batter-ness with the addition of the sugars.  No, I didn’t eat 4 cookies worth of dough … >.>.  Shhhhh.  Next time I think I’ll try leaving out the sugar. Or maybe make a full batch leaving all sugar out of one half, and adding only brown sugar to the other half.  Will have to do some experimenting.  I know all my friends…

    I’ve been cooking up a storm lately, so we’ve been eating leftovers out the wahzoo.  They’re delicious, but they impede my cooking because I don’t want to waste food!  So I made pot pie filling the other day for an easy Monday dinner before I go to volleyball.  But I was ravenous when I got home, so I had to make an appetizer/side.  These “pizza rolls” were perfect!  So easy to make and so yummy!  T approved.     I recently discovered that I don’t mind brussel sprouts.  I honestly had never tried them before last year when I first made this recipe.  To be fair, it was because my mother hates them and obviously never made them for us growing up because she didn’t want to eat them.  So to my young self, since everyone said brussel sprouts were icky, they were obviously icky!  Child logic at work for you.     I really wanted to make these lamb kebabs!  I’d never really made lamb before, and these looked simple and tasty.  The spices were definitely aromatic as you heat them up on the stove, although I didn’t do a wonderful job of mixing them well into the meat.  Ad I’m always worried that the meat will turn out tough, and that’s not what you want, especially for kebabs.     This recipe is one of those easy, pretty, and tasty ones!  This works with both spicy and sweet Italian sausage, as I’ve used both and it’s tasty both ways!  I served Drunken Italian Noodles with homemade applesauce and Parmesan edamame beans!     It’s pretty rare that I make a recipe from scratch.  Most times I just browse pinterest until I’m drooling then pick the thing that is most drool-worthy that day.  But these chicken burgers are quite tasty, and I’m pretty proud of them.  Even more so because I snuck a veggie into the burger.  Plus with homemade pesto, I feel like it’s complete.
