    Last weekend we had a feast!  My parents and my godparents were in town, and we made enough food to feed a small army!  I made lamb kebabs (check out the recipe here), roasted broccoli, naan, rice, and then my key lime pie bars and oreo brownies (I have yet to post the recipe!).  I ended up making gyros tonight because I had extra lamb, and the recipe I found on pinterest from food.com looked surprisingly easy!  That and we picked up our adopted shiba inu Kenichi today!!!!  Squeeee!  So T and I wanted to spend as much time as possible with him, and I…

    April 25, 2016bestwithchocolate@gmail.com

    I’ve made this recipe a few times, and while delicious and the top and bottom of the noodle nest are crispy, the noodles are never quiiiiiite crispy enough for me!  That said, it’s still amazingly delicious!  I’ll bet you need to quickly cook the noodles in water and then add them to the pan, but that’s too much effort for me when you can just add water to the pan you’re already cooking in.  Or add more oil to the pan to fry them up, but I prefer to pretend I’m a healthy person.  I wouldn’t call this a one-pan…

    April 19, 2016bestwithchocolate@gmail.com

    Here is my classic turkey burger recipe, with a little dijon thrown in for some flavor!  I classify this recipe as a “simple” one since I have most of the ingredients around the house, and the ones I usually need to shop for include: ground turkey, gruyere, and scallions!  Less than 5 ingredients, so I call simple. Just toss everything in a bowl, and make sure to mix together thoroughly, but only until just incorporated unless you want some tough burgers!  I’ll let you in on my secret for well-cooked burgers when you’re making them on the stove!  I like the…

    Corn bread, and beef, and cheese, oh my! This is a great make-ahead meal!  We had a game night with a friend coming over, and I was going to try to not actually be in the kitchen making dinner for like half of his visit (like I usually am most times when people visit for dinner).  I do love our current place for the fact that it has an open layout, and I can actually be in the kitchen talking to other people in both the living room area and the dining room area, and the kicker–NOT in my kitchen.  It’s the…

    These Mediterranean pinwheels are a perfect, EASY appetizer.  This is one of our go-to’s because T likes them, and I like them, and he’s less likely to eat half the cheese and salami before they go in the oven.  Though maybe more likely to eat half of them coming out of the oven.  Plus there’s the added benefit of a short grocery list.   There are only 6 ingredients (I’d really say 5…if you don’t have olive oil, you’re doing the kitchen wrong), and all the steps are simple.  It’s even better to get some help, especially if you’re making these…

    garlic knot pizza dip;

    March 31, 2016bestwithchocolate@gmail.com

    This recipe is exactly what it sounds like!  Pizza dip (though I will say, a little bit more of a white pizza), surrounded by soft and chewy garlic knots!  Definitely turn up the garlic on those garlic knots too.  Sometimes if I’m feeling extra-garlicky I will add a few pinches of garlic powder and a few pinches of onion powder to the butter mix. My only concern about this recipe is that it’s not quite enough to share with a large party of people.  I wanted to make it for a hangout we’re doing this weekend with around 20 people, but with only…

    March 30, 2016bestwithchocolate@gmail.com

    So coming back from Iceland, I decided to do another round of hello fresh so that I wouldn’t be worried about grocery shopping and cooking and all that jazz when we were back.  The first recipe we tried was a Dijon pork meal, that was satisfactory and I might post it at some point, but this juicy Lucy burger is definitely on my to-make-again list! This burger is more than your typical throw-it-on-the-grill burger, and definitely is schmancy enough to be like a restaurant burger, but it’s fairly straight forward to make.  I’d pull this one out when you want that…

    This breakfast crescent ring is yumm-ee!  It does take a little bit of effort rather early in the morning I’ll admit, with all the different pieces that go together.  But it was tasty, that’s for sure!  Actually it was tastier than I even expected, but I’m glad it was since it took a little more effort than expected at first glance. The one thing to do next time to make it look even better would be to make the ring a little smaller so that there isn’t quite as large of a hole in the middle.  I think that would make…

    This was actually the first time that I’ve made risotto on my own!  This was my last roommate’s go-to recipe when she wanted to cook, and let me tell you, it’s amazing.  It does take a little bit of a time investment, but some of my favorite memories from when we lived together were us chatting in the kitchen over a pot of risotto.  We also usually had glasses of wine in our hands.  I mean you need wine for the recipe, so obviously the natural extension was to sip on a glass!  I definitely recommend that; maybe I should add…

    Granola is one of those things that I thought for the longest time I didn’t like.  And then I tried this recipe!  It’s a little like crack.  When I first made this recipe, I think I made it every week because I went through it so fast–I ate it for breakfast every day.  It’s the perfect balance of sweetness and just a touch of salt. It goes with just about everything since it’s really just oats and almonds with a little extra almond enhancer (almond extract).  My favorite is actually just plain vanilla yogurt.  I keep a jar at my desk…

    This is an awesome sidekick to a meal!  It does take a long time, but not a ton of effort, just the checking every 15 minutes and flipping.  Most of the work is upfront, and also works out well for a helper to make when you’re preoccupied with the main dish.  Holy butter!  No literally, this is what happened when I microwaved the butter…I thought it was amusing so I took a photo, XD. This recipe was adapted from Spicy Southern Kitchen’s melting potatoes recipe, and let me tell you, they really are “melting”!  The chicken broth gives them a full whallop…

    We went whole-hog on dinner today!  On the menu: caramelized onion crispy chicken, ranch broccoli, and melting potatoes!  I did cheat a little and the ranch broccoli came out of a bag, but hey, you need those fast and easy dinner add-ons!  Bonus points for it being a vegetable.  But this caramelized onion crispy chicken was really pretty great.  It was simple, and quite tasty. I do say, since I adapted Dara’s Crispy Chicken with Caramelized Onions and Tomatoes sans tomatoes (T doesn’t like tomatoes in general), I want to add a sauce next time.  I think a lightened up balsamic sauce would…
