Today, T made dinner! Like whole hog, from shopping to marinating to grilling. I mean, to be fair, I guess I made a rice side from a bag, but it was the kind where you just add water and boil. So today was game day! D&D Sunday as they usually happen to be, and instead of going all out to make all of the food, we did a potluck! It was wonderful–worked out perfectly. This recipe comes from a random late-night craving! It’s an amaaaazingly simple recipe and if you’re going to eat pancakes anyway, why not spruce up those plain jane pancakes with some cake batter? Everything is better with cake batter. And make sure you reserve some sprinkles for topping! Gotta make sure there’s no doubt in anyone’s mind that these are cake batter! I will say, now that we have a dog, I feel guilty about using my crock pot. Not enough to stop, since I know we feed Kenichi well, but it must be some form of humane torture to have the house smelling like chicken all day and not even have the consolation that you’ll get some later. I made this for a quick dinner today, and it was tasty and looked just like the pictures over at damndelicious! I made them for dinner with some fried rice to whip in some veggies, but these would also be perfect as an appetizer! Make the meatballs a little bit smaller for an appetizer, but would be a good small party recipe. So, as in my other drink post: strawberry shortcake vodka slush, this isn’t really a full-blown recipe, but more just a conglomeration of ingredients in which eyeballing is the key to success. The reason is that for alcoholic drinks, I don’t presume to judge you. You can put as much or as little tequila as you’d like for this one. Basically you grab some triple sec, tequila, limes, and ice!
