Do you ever dream of waking up to soft fluffy pancakes? I do. And these healthful greek yogurt pancakes are packed with whole grains, low on the fat, and a bump in protein. Perfect for a healthy start to your weekend! Or any day, really. Serve these greek yogurt pancakes with syrup and your favorite fruit.
What are your favorite pancake toppings? For these healthful greek yogurt pancakes, I went with sliced bananas and walnuts. But pick your favorites. Sliced strawberries, or a few nice raspberries would also be a lovely topping. Actually, a personal favorite is sliced strawberries and lemon-infused honey, for a fun twist on some classic pancakes. But you could also add a handful of chocolate chips to your batter, or blueberries! I love the possibilities.
Are you obsessed with maple syrup? Maple syrup is actually not my first choice on pancakes. I tend to prefer savory breakfasts to sweet. So most times I’ll go for just a little smear of butter. But when I do use maple syrup it has to be the good stuff. The real stuff. It just has so much more flavor you know? And a little goes a long way. But because I wanted t addnuts and fruit to these healthful greek yogurt pancakes, I went with sweet maple syrup as my topping.. Adding nuts and fruit to this healthful breakfast of greek yogurt pancakes just means even more nutrition and healthy energy.
The credit for this recipe actually goes to having too much Greek yogurt in my fridge, I always keep Greek yogurt in my fridge for cooking and baking, and this time I went for the giant container. So I needed to create a few recipes to use up some of the Greek yogurt in my fridge. I woke up the other morning craving pancakes, and thought: there must be a way to use greek yogurt in a pancake. I turned to this pancake recipe from Just a Taste, and adapted it for myself! And now these greek yogurt pancakes are the perfect delicious, small-batch pancakes for when I get that craving!
These pancakes are so light and fluffy, and who doesn’t love a fluffy pancake? This recipe makes 4 large pancakes, perfect for a large stack for yourself, or to share with another. When I say large pancakes, I use an 8-inch omelet pan to make my big pancakes. But if you prefer smaller pancakes, use a bigger pan and just make several dollops of batter. That way you can cook multiple at one time. You can scale up the recipe, of course, but since it’s just me and my partner at home, this recipe is the perfect size to not worry about leftovers. Satisfy your craving without worrying about leftovers!
Secrets to Success
- If you don’t have coconut flour around, you can substitute almond flour. Coconut flour tends to absorb more moisture though, so you may need more almond flour than coconut flour.
- This recipe is sweetened with honey. Try local honey–it may even help your seasonal allergies.
- I like big fluffy pancakes, but sometimes smaller pancakes are preferable. If you like smaller pancakes, I would use a bigger skillet and then make small dollops of batter. That way you can make multiple pancakes on a single burner.

Ingredients
- ½ cup whole wheat flour
- ¼ cup all-purpose flour
- ¼ cup coconut flour
- 2 tsp baking powder
- ¼ tsp salt
- 2 tsp honey
- ¾ cup unsweetened almond milk
- 1 large egg
- ¼ cup plain greek yogurt full fat
- 1 tsp vanilla
- maple syrup for serving
- fruit & nuts for serving
Instructions
- In a large bowl, whisk together the whole wheat flour, all purpose flour, coconut flour, baking powder, and salt.
- Add in the honey, almond milk, eggs, yogurt, and vanilla and whisk together until combined in a loose batter.
- Heat a nonstick skillet or griddle over medium heat. For large, fluffy pancakes use an 8” skillet (makes 4 pancakes), or a larger skillet or griddle for more smaller pancakes. Spray with cooking spray.
- Working in batches, spoon desired amount of batter into the pan. Allow to cook until bubbles form, then flip and transfer to a plate.
