In a large bowl, whisk together the whole wheat flour, all purpose flour, coconut flour, baking powder, and salt.
Add in the honey, almond milk, eggs, yogurt, and vanilla and whisk together until combined in a loose batter.
Heat a nonstick skillet or griddle over medium heat. For large, fluffy pancakes use an 8” skillet (makes 4 pancakes), or a larger skillet or griddle for more smaller pancakes. Spray with cooking spray.
Working in batches, spoon desired amount of batter into the pan. Allow to cook until bubbles form, then flip and transfer to a plate.
