I was really craving chocolate the other day, and it’s honestly been a little while since I’ve had that “got-to-have-it” feeling! I’ve been on more of a savory kick, reveling in recipes like butter sage sweet potato gnocchi and french onion burgers. But for someone who doesn’t drink coffee, this recipe is a surprising favorite of mine!
I think the thing that does me in is the full spectrum of flavors. Chocolatey sweetness, balanced by bitter coffee, and savory salt. Well I couldn’t write “salty salt”, now could I? Because of the coffee flavor, I think they’d be a great pick-me-up morning breakfast snack, kind of like a biscotti, although much much softer. Paired with a cup of coffee, sitting in a cafe on a lazy morning, just watching people go by. The coffee flavor is fairly pronounced, so you can always add 1 Tbsp. and taste test to adjust to your desired coffee level.
Honestly, they’re also great served with this bailey’s chocolate mousse I shared Monday! The mousse adds additional sweetness to offset the bitter coffee (hey, plus some “tipsy”). Besides, you can never go wrong adding some more chocolate to any dessert!
Let me know what you think if you try this recipe! Bonus points if you make a whoopie-pie sandwich with bailey’s chocolate mousse.
