Let me start off by saying–yes, I realize my “jelly rings” are not rings. 🙂 I made mine in the shape of raspberry jelly sticks because I don’t actually have round ring molds. But it’s all the same ingredients, whether straight or circular! These raspberry jelly rings are made of chocolate wrapped around a jellied red raspberry center. Classic jelly rings usually are available in stores around Passover, and sometimes come in other flavors. Though, I consider raspberry the classic original (whether it is or not–it was my first and favorite flavor!).

I also fully admit that this isn’t my shiniest, snappiest, tempered chocolate work. It’s not quite as pretty as butter with a side of bread’s recipe that I adapted. Firstly, I didn’t even attempt to temper the chocolate myself because I have a young baby and rarely get 20 minutes to myself, much less enough time to fully temper the chocolate and make multi-step chocolates.

So I used Ghirardelli coating wafers and probably overheated them a little since you can see tiny bits of bloom on the outside of the chocolate (those lighter marks on the chocolate). But bloom, while it might not look as polished, doesn’t get in the way of flavor at all so these raspberry jelly rings (sticks) still tasted delicious!

Raspberry jelly rings are my favorite flavor, but nothing should stop you from experimenting with other flavors. It’s so, so easy to use the same recipe and change flavors. Because you’re using jell-o, you can try multiple other flavors by swapping out your Jello flavor. Easy peasy. Orange jelly rings are also a flavor you can typically find around Passover, but nothing is stopping you from using pineapple jello, or lime for a fun twist.

If you like experimenting, I took this basic recipe and made four fun new flavor combos and shaped them into jellied chocolate frogs! Four flavors and colors, one each for each of the four Hogwarts houses so you can get sorted into your house via your tastebuds. In fact, if you hop over there, there’s way more than 4 flavors–I came up with a whole multitude of flavors to try out.

When I say only 5 drops, I mean only 5 drops. Lorann’s comes in multiple flavors so it’s a great way to make some fun combinations. It doesn’t have to be raspberry for example, use a lime flavor with the raspberry jell-o to make a raspberry lime jelly ring.

Ingredients

  • 1 packet unflavored gelatin (2¼ tsp)
  • ¼ cup cold water
  • 3 oz raspberry Jell-O (or flavor of choice)
  • ½ cup sugar
  • cup hot water (¼ cup + 2 Tbsp)
  • 5 drops lorann's raspberry flavoring (alt. ½ tsp raspberry extract)
  • 5 oz dark chocolate candy coating

Instructions

  • Prepare a 9"x5" loaf pan by spraying it with oil. Line with parchment paper (the spray will help it stick to the pan) and then spray generously with non-stick spray. Set aside.
  • In a small bowl, add ¼ cup cold water, and then sprinkle in the unflavored gelatin. Using a small whisk or fork, mix together to ensure a smooth consistency without clumps.
  • In a medium pot add 3 oz raspberry jell-o, ½ cup sugar, and ¼ cup + 2 Tbsp hot water. Bring the mixture to a simmer and stir until all ingredients are dissolved.
  • Add in the gelatin mixture and break it up with a spatula, stirring until it dissolves. Allow the mixture to boil on medium-low heat for 10 minutes.
  • Remove from the heat, and stir in flavoring extract. Pour into prepared pan, and optionally use a toothpick to pop bubbles, or use a spoon to lift off any foam.
  • Allow mixture to cool at least 2 hours. Once cool and jellied remove from the loaf pan onto a cutting board.
  • Dip a paper towel in a neutral oil (or spray with cooking spray) and rub the edge of your knife with the oiled towel. Cut to desired shaped. Make sure to continue to use the oiled towel between each cut to prevent sticking.
    I like to trim the edges to make clean rectangles, and then make slices roughly a half inch wide. I think cut each strip in two, so I end up with roughly ½" x 2" strips.
  • Melt your dark chocolate candy coating according to package instructions. Using two forks, dip each jelly strip in chocolate and gently tap to remove excess chocolate before placing onto parchment or wax paper. Repeat for all jelly strips. Allow to set and optionally trim any chocolate "foot" from the bottom if you prefer clean rectangles.
