Every once in a while you just need a super simple recipe. So easy you could do it in your sleep–stupidly simple. Few ingredients, and fewer steps for delicious food made quick and easy! Here’s a roundup of my favorites, quick dinner recipes; simple desserts; and quick and easy appetizers, all in one place.
no bake eclair cake;
I love this no-bake eclair cake. A take on an icebox cake, layered graham crackers, vanilla pudding, and topped with the perfect chocolate icing. You can prepare it the night before and enjoy it all day long! I love this recipe for a potluck dessert or a summer treat. It’s cool and refreshing.
lemon cake bars;
These lemon cake bars only require three ingredients and you literally could not find a simpler recipe that comes out so delicious. Light and airy, with a refreshing lemon and almond flavor base. Add a whole–gasp–fourth ingredient and add some fresh fruit to the bars for extra texture and flavor!

So named because I developed this recipe during COVID, this is the perfect quick no-yeast recipe to make bagels at home. Ever wake up Sunday morning just craving a bagel? Well, now you can make a small batch of these quarantine bagels right at home, super quick.

A homey pasta, perfect for weeknight meals. Simple flavors let each ingredient shine through–the sharpness of the pecorino romano, and the heat of fresh ground pepper. I recommend tagliatelle or long noodles to really soak up the flavors of cacio e pepe.

Whenever I’m in need of a quick, easy, and delicious vegetable side dish, I always turn to roasted brussels sprouts at Pinch of Yum. They’re so tasty and man I just love those crispy leaves that have fallen off the main brussels. Pro tip: pre-heat your pan in the oven as it heats up to temp, because it’ll give a nice little extra sear as you bake them!

The key to this easy recipe is pre-made puff pastry sheets. Sure you could make your own puff pastry, but man it’s a lot of work (tons of folding and rolling butter). The storebought stuff is delicious and consistently gives you puffy and crisp puff pastry. Plus, it’s easy to swap out gluten-free puff pastry and stuff it full of fresh, rich whipped cream, and delicious red strawberries.

One of my favorite weeknight meals. When you crave Chinese takeout, eggroll in a bowl is a lifesaver. A healthful alternative to eating out, you get all the wonderful Asian-inspired flavors combined in one bowl. Shredded cabbage, ground pork, and carrots make up the healthy base of this one-pot meal.

Icebox cake is one of my family’s go-to desserts. You do have to make it ahead to let the chocolate cookies soften, but chocolate icebox cake is so simple to make. I have fond memories of making this recipe with my family growing up–it’s great to get little hands involved! Or try a gingerbread twist and make a gingerbread icebox cake for a festive holiday treat!

One of my go-to side dishes when I want a delicious and easy vegetable. With that salty punch of parmesan cheese and a little crunch from some panko breadcrumbs, it’s hard to steal the spotlight from these parmesan zucchini.

Cake box crinkle cookies are so, so simple. They’re light little clouds that melt in your mouth, and pssst, you can make them with any flavor of boxed cake mix. Chocolate and orange is a classic, and a personal favorite. Sometimes you just need a little poppable bite of chocolate, and these orange truffles are so easy, and delicious. Rolling the orange sugar truffles in sugar gives them such a satisfying outside crunch.

Carbs and cheese are simply made for each other. This pull-apart bread has toasty, warm bread slathered with melty cheese and garlicky, onion flavors for a perfect, albeit slightly messy, appetizer.

When you’re craving apple pie without all the work, it’s apple pie crescents to the rescue! Quick and easy, wrap up apple slices with some cinnamon sugar and chopped nuts, and top with chocolate sauce if you date!

Another weeknight meal that’s cravable and still simple. Panko breaded, pan-fried chicken makes the perfect crunchy base, and drizzled with hot honey for a spicy-sweet combo that’s simply delectable.
churro cheesecake bars;
This buttery, cinnamon sugar churro-inspired cheesecake bars are so tasty, and only take 6 ingredients! Buttery, flaky pastry sandwiches a creamy, cream cheese cheesecake filling, and you top with a sprinkle of cinnamon sugar which gives the top a nice crunch.
