Oh the weather outside is frightful. And that means it’s time to bake cookies! We had our first snow of the season a while ago, and I was in a baking mood. What’s more perfect than making winter blizzard cookies with blue frosty sprinkles? These soft sugar cookies are a cross between sugar cookies with a hint of the brown sugar of a chocolate chip cookie.

You can use any sprinkles you like, but I think these snowflakes mixed with blue sprinkles are just so festively snowy. But of course I had to add some chocolate, so I used this recipe as an excuse to try out funfetti chocolate chips. They were surprisingly better than I thought they would be! With an extra punch of vanilla, they go really well with these winter blizzard cookies.

Of course, if you can’t find funfetti chocolate chips, you can always swap in white chocolate chips. They honestly weren’t excessively “fun”. They did have a few dots of color in the chips, mostly purple and green and red, but they didn’t stand out as much as a funfetti cake. Still, they were tasty, and the sprinkles bring enough color that it doesn’t matter! I’ll need to do another chocolate chip review of some new flavored chocolate chips I’ve found recently. (The original ranking took a look at 5 different flavors of chocolate chips.)

Besides, you always need to have your arsenal ready for a snow day. Whether you’ve got a bachelor or bachelorette pad, or a house full of kids, everyone loves some milk and cookies on a snuggly snow day. These would pair especially well with hot chocolate after an afternoon of playing in the snow.

This recipe makes a good number of cookies, so if you want to stockpile a few cookies, scoop the dough and store in the freezer. I love this hack for keeping some homemade cookies on hand for last minute drop-ins and gifting cookies to others during the holidays. I use a cookie scoop to portion out dough and then just freeze the cookie dough.

Of course, that’s assuming that the dough makes it past me to the freezer, and past my husband from the freezer to the oven. He’s been known to sneak some of the raw dough from the freezer. Once or twice, or…a lot. =) You don’t want to keep the cookies indefinitely in the freezer–they’ll dry out a little bit over time. Also make sure they don’t get freezer burn because ice and water can affect the baking outcome.

Secrets to Success

  • In full honestly, the thing that makes these cookies “blizzard” cookies are the sprinkles! But you can use whatever sprinkles you want! I love that with the blue and snowy sprinkles they’re holiday-agnostic. But if you celebrate Christmas and want to make them more Christmas-y, use some green and red sprinkles. Or even make these Halloween themed and go with some spooky black and orange sprinkles.
  • I really like the funfetti sprinkles I added to these cookies! Of course, as a special flavor you may not be able to find them. If you can’t find them on your grocery store shelves, swap in white chocolate chips. Or any of your favorite chocolate chips really. They wouldn’t be bad with some classic semi-sweet chocolate chips either.
  • These cookies pair deliciously with hot chocolate! On a snow day after playing all afternoon in the snow, what better way to spend a warm and snuggly evening than baking cookies and eating the soft, fresh cookies with a warm cup of hot chocolate?

Ingredients

  • ½ cup butter (softened)
  • ½ cup cream cheese
  • ½ cup sugar
  • ¼ cup brown sugar
  • 1 egg white (if doubling the recipe, use a whole egg)
  • ½ tsp vanilla
  • cup flour
  • ½ tsp cornstarch
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup funfetti chips (or sub white chocolate chips)
  • ¼ cup chocolate chunks
  • 3 Tbsp blue snowflake sprinkles

Instructions

  • Cream together butter and cream cheese until well combined.
  • Add ½ cup sugar and ¼ cup brown sugar and cream together until light and fluffy.
  • Add in the egg white and ½ tsp vanilla and beat until combined.
  • Add in 1¾ cup flour, ½ tsp cornstarch, ½ tsp baking soda, ¼ tsp salt, and mix until combined.
  • Fold in the vanilla funfetti chips, chocolate chunks, and 2 Tbsp sprinkles (reserving some sprinkles for topping).
  • Scoop into 1½" balls and chill for 30 minutes – 1 hour.
  • Remove from the fridge and flatten slightly. Press extra sprinkles onto the top as desired.
  • Bake for 8-10 minutes or until lightly browned. Remove from the oven and allow to cool before serving.
