I’ve been trying to eat healthier. I’ll admit I did take a break when I was in Germany–you can read about alllll the food in my post german castles and bavarian food; No regrets. But one of the reason I love this recipe for vegetable egg rolls is because it satisfies a late-night craving without all the extra sodium and MSG. And they’re tasty to boot!
It’s completely a vegetarian recipe too! And baked. While of course if I had the choice, I’d be all up on those fried pork eggrolls, but for a homemade version without the guilt, it’s a pretty good alternative.
You’ll definitely want to coat the rolls with oil so that they get nice a crisp. You can use a pastry brush and paint them, but I actually prefer to use a spray. It gives an even lighter coating and more coverage.
This is definitely a fresh recipe, so you get that crisp crunch. It’s also great to meal prep ahead of time and bake off right before a party or for an easy appetizer.

Ingredients
- 2 cups chinese cabbage, shredded
- 1 cup cabbage, shredded
- 2 Tbsp green onions
- 1 tsp fresh ginger
- additional veggies as desired (e.g. shredded carrots, edamame, mushrooms, etc.)
- 1 Tbsp oil
- 2 Tbsp soy sauce
- 24 egg roll wrappers
Dipping Sauce
- 3 Tbsp soy sauce
- 1 tsp soy glaze
- pinch of red pepper flakes
- splash of rice vinegar
Instructions
- Shred both cabbages, and slice green onions. Peel ginger and mince. Slice or chop any additional vegetables as desired.
- Heat a pan over medium heat, add the oil saute the green onion, garlic, and ginger until slightly softened (1-2 minutes). Add the veggies if using, and cook until softened.
- Turn off the heat and add soy sauce. Adjust soy sauce and salt levels to your preference.
- Begin to fill the egg roll wrappers. Lay out a wrapper and place mixture just off center of the wrap. Fold the edges in and wrap tightly. You can use your finger dabbed in water to help the edges stick as needed.
- Lay onto a parchment paper lined baking sheet and bake for 10-15 minutes or until edges become crisp.
Dipping Sauce
- Mix together all ingredients, and serve with egg rolls fresh from the oven.
