This recipe comes from a random late-night craving! It’s an amaaaazingly simple recipe and if you’re going to eat pancakes anyway, why not spruce up those plain jane pancakes with some cake batter? Everything is better with cake batter. And make sure you reserve some sprinkles for topping! Gotta make sure there’s no doubt in anyone’s mind that these are cake batter! If your first thought is that these look a lot like my previous cake batter chocolate chip cookies, you would be right! The differences are subtle, but they are different. For one, the cake batter chocolate chip cookies are quite a bit more like chocolate chip cookies than these, which I would compare more to extra vanilla-y sugar cookies. These are yum and fun to pull out! I found that the recipe I used (see below) was actually a bit sweet, and judging by my taste-test of the batter, I think the cookies lost some of their cake-batter-ness with the addition of the sugars. No, I didn’t eat 4 cookies worth of dough … >.>. Shhhhh. Next time I think I’ll try leaving out the sugar. Or maybe make a full batch leaving all sugar out of one half, and adding only brown sugar to the other half. Will have to do some experimenting. I know all my friends…
