So today was game day! D&D Sunday as they usually happen to be, and instead of going all out to make all of the food, we did a potluck! It was wonderful–worked out perfectly. This is a nice, clean, vegetarian recipe! It’s super easy to make, and would also make a great side, although we ate it as the main dish tonight. It is definitely a little on the light side for a main meal, but was still super tasty. It’s got a variety of vegetables and a nice Mediterranean flair.
