Rice noodles tossed with a rainbow of veggies and egg, pulled together by a complex sticky sauce and topped with fresh herbs and chopped peanuts. – – It’s been a full weekend! Luckily I have off today to recover, and generally be a lump! Sometimes you need one of those laze-about days, and I think I need one! To be fair I still have a phone call and a doubleheader volleyball match, but those aren’t until the evening so we’re gonna ignore those for now. We’ll go day by day since there was so much going on! I will say, now that we have a dog, I feel guilty about using my crock pot. Not enough to stop, since I know we feed Kenichi well, but it must be some form of humane torture to have the house smelling like chicken all day and not even have the consolation that you’ll get some later. Here’s a great party recipe! The best part is that the veggies can be swapped out with whatever you have lying in the fridge. I ended up using celery and carrots, though I’m sure you could add in peppers, jalapenos, broccoli, spinach…anything you want! And the other ingredients take a number at 4. Amazing isn’t it? You of course can chop all of these vegetables by hand, but I highly recommend and food processor or chopper. I love this 1.5 c food chopper and it makes short work of vegetables! It’s cheap, safe, and reliable, and easy to clean and pack up. Especially…
