I’ve been cooking up a storm lately, so we’ve been eating leftovers out the wahzoo. They’re delicious, but they impede my cooking because I don’t want to waste food! So I made pot pie filling the other day for an easy Monday dinner before I go to volleyball. But I was ravenous when I got home, so I had to make an appetizer/side. These “pizza rolls” were perfect! So easy to make and so yummy! T approved.
The ones pictured here are made with mozzarella and cheddar cheese! But you can use whatever kind of cheese you like, e.g., pepperjack for that extra kick to your pizza rolls, or anything else you have on hand that’s easily cut into cubes or shredded.
These pizza rolls are a perfect snack to heat up in the toaster oven and take on the go too! Just remember that if you’re taking them out of the fridge, it will take a little longer for the centers to heat up and get gooey again.
stuffed pizza rolls;
Ingredients
- 1 can refrigerated biscuits
- 8 oz block of cheese (pepperjack, cheddar, mozzarella, etc.)
- 36 slices pepperoni
Instructions
- Cut the block of cheese into 8 cubes approximately 1"x1". Cut the pepperoni into quarters, if desired.
- For each biscuit, place a cube of cheese and some pepperoni in the center. Using your fingers, pull the edges of the biscuit out and pinch them together firmly to form a ball.
- Place seam-side down on a tray and bake for approx. 15 minutes or until golden brown.
