strawberry sheet cake;
This sheet cake is a beautiful, light, summery dessert! It’s perfect for a crowd and of course, stuffed chock full of delicious strawberries. Baked into the cake they get a beautiful delicious jammy flavor, and next time I want to stuff even more strawberries into this cake! Tyler says this cake was just as good as his favorite strawberry streudel doughnuts; and honestly it’s a little easier because it doesn’t involve doughnut pans, or chopping the strawberries quite as small!
In addition to stuffing this cake full of strawberries, the other key to this recipe is the sprinkle of sugar on top–don’t forget it! It makes a nice little crust on top of extra sweetness, and Tyler said it’s his favorite part! So if that 3 Tbsp doesn’t quite go the whole way around, make sure to sprinkle some more! Go ham! Or go sugary sweet, I suppose. Ham probably wouldn’t go great on this one.
Feel free to eat it straight–it’s delicious! But you can always add some cream–freshly made is best, but canned is second best if you don’t have the time or capacity to whip up your own. Or always go with some ice cream if it’s a hot summer day, and don’t forget to dress it up with sprinkles!

strawberry sheet cake;
Ingredients
- 9 Tbsp butter
- ¾ tsp salt
- 1½ cups + 3 Tbsp sugar
- 1 egg
- 1 egg yolk
- 1½ tsp vanilla
- ¾ cup milk
- 2½ tsp baking powder
- 2¼ cup flour
- 1½ lb fresh overripe strawberries
Instructions
- Line a 9”x13” cake pan with parchment paper, and lightly coat the sides and corners with butter or non-stick spray.
- Slice strawberries into quarters and set aside in a small bowl.
- In a large bowl, beat butter, salt, and 1½ cups sugar until fluffy.
- Add egg, yolk, vanilla, milk and mix until combined. Mix well, but it's fine if small chunks remain.
- Beat in the baking powder and ensure even distribution.
- Scrape down the bowl and beat in the flour until just combined.
- Spread the batter into the prepared pan. Arrange the strawberries as snugly as you can fit them into the batter.
- Sprinkle top with remaining 3 Tbsp sugar and bake for 45-48 minutes or until toothpick comes out clean. Eat fresh or top with cream and strawberries.
