It’s that time of year again! When everything is red and pink and white, and everyone in love has rose-colored glasses on. Whether you celebrate Valentine’s Day, Galentine’s Day, or just treat it like any other day, these red and luscious red velvet cookies will brighten up your day! Of course, they can brighten up any day 366 days a year! That’s right, this year is a leap year. I only know that thanks to some date math I had to look at for my work, haha.
But these red velvet cookies are bright and luscious, and if they don’t scream Be My Valentine, then I don’t know what will. I’m honestly mostly ambivalent about Valentine’s Day. I agree with my husband who thinks it’s just a greeting card ploy, but I don’t mind it. It was a fun excuse to get candy as a child and hand out valentines at school. Pokemon valentines were the best! I still remember those little cardboard boxes of tear apart valentines. What were your favorite Valentines?
Honestly, I associate Valentine’s Day with my mom leaving us little boxes of conversation hearts more than romance. It’s a sweet memory for me. But I know there’s a lot of pressure associated with the day, and the possibility for bad memories to pervade the day as well. So I wish you a happy Valentine’s Day, whatever that means to you!
When you sit down to make these red velvet cookies, make sure you have a LOT of red food coloring. In order to get the vibrant color, you’ll need 2 Tbsp, which is a lot. The dredges from your mostly-used food coloring bottle won’t do. Also keep in mind that red. stains. everything. Even more than other colors.
It’ll stain your hands, and clothes and kitchen tools if you’re not careful. I like to use my conveniently red spatula to mix the batter. Any well-made spatula should be fine, but just tread carefully. Red food coloring has definitely stained some wooden spoons, and my hands last time I made these cookies. So you may want to default to some of your older tools or things you don’t care about.
I think these turned out smashingly color-wise. But they still have a touch of cocoa flavor and a lot of red vibrancy, so I’d call this recipe a success! I hope you make these with love whenever you choose to make them, and manage to do it without too many red stains! Make sure to share the love, or, you know, just eat them yourself on the couch. Secrets to Success
- Watch out! Red food dye is particularly staining, so make sure you keep your cooking area tidy, and use good quality tools, or ones you wouldn’t worry about staining. I recommend a ceramic or metal bowl, and a rubber spatula. And make sure to wash your tools quickly after use so the dye doesn’t set.
- Save some white chocolate chips for after the cookies have finished baking. Pressing a few into the top when they’re still soft makes them look picture perfect! Especially worthwhile when you want to give some as a gift.
- An easy and festive way to wrap these for a gift is to use fold-top sandwich bags, snip the folded over flap so you have one even bag, and tie the top with some pretty ribbon! I use this trick all the time for easy individual bundles of cookies.

Ingredients
- 8 Tbsp butter (1 stick)
- 6 Tbsp shortening
- 1½ cups sugar
- 1 egg + 1 yolk
- 1½ tsp white vinegar
- 1½ tsp vanilla
- 1½ Tbsp red food coloring
- 2¼ cups flour
- 1½ tsp cornstarch
- 2½ Tbsp cocoa powder
- ½ tsp salt
- ¾ tsp baking soda
- 1 cup white chocolate chips
Instructions
- In a large bowl, blend butter, shortening, and sugar with hand mixer. Add egg, egg yolk, vinegar, vanilla, and food coloring and blend. Food coloring may stain.
- In a medium bowl, combine dry ingredients: flour, cocoa powder, cornstarch, baking soda, and salt.
- Add dry mixture to butter mixture and stir to combine.
- Fold in approx. ⅔ of the white chocolate chips.
- Scoop dough out by heaping tablespoons and place on cookie sheets, evenly spaced. Press tops of cookies down slightly with a finger.
- Bake 8-9 minutes at 375°. Immediately after removing from the oven, press remaining white chocolate chips into the top as desired.
