Light and fluffy no bake raspberry cheesecake topped with lime curd and fresh raspberries make this raspberry lime cheesecake a refreshing addition to any dessert table this summer! The raspberry cheesecake base is sweet and creamy, paired with a flaky, buttery crust.
And of course you have to include fresh raspberries to bring brightness and some extra color to the presentation. But what really sets this raspberry lime cheesecake apart is the lime curd. A tart pop in your mouth that leaves you salivating and reaching for more!
For this raspberry lime cheesecake, or with any pie—start with your pie crust base. Now I love a good homemade crust as much as the next guy. But for this recipe, because I made my homemade lime curd from scratch, I went with a little help here. (Plus my gluten-free needs make it harder to whip up my go-to recipe. =\).
I like using King Arthur Flour’s GF pie crust (not sponsored, just my preference) for an easy pie crust mix! But you can also grab a frozen pie crust from the freezer section of your grocery for even less work! Suit the recipe to your needs. Just don’t forget to bake off your crust if you opt for frozen, since the cheesecake filling itself is no bake.
The key to smooth cheesecake filling, I’ve found, is letting your cream cheese come to room temperature. This becomes even more important with no-bake versions. No pesky lumps! If you let the cream cheese come to room temperature, you may even be able to use a wooden spoon for mixing. But for extra light, fluffy, and smooth, use a hand or stand mixer to whip together the filling. It will incorporate a little bit of air into the cheesecake filling but that’s what helps make it melt in your mouth!
Once you have the cheesecake filling for your raspberry lime cheesecake, we need to add the “raspberry”. Stirring in swirls of raspberry jam add sweetness and raspberry flavor. I like the duality of flavor you get by using raspberry preserves but then also adding fresh raspberries around the pie for decoration. The addition of raspberries themselves add another texture and reinforce the pop of raspberry against the lime curd.
It’s up to you for this second choice: make homemade lime curd or go with store-bought. I personally love the control of homemade lime curd—you can obtain the perfect balance of tart and sweet. But it does take time to make, and time to cool, so if you’re lacking in time then grab a jar from the store, easy-peasy.
Note, I find store-bought curds to be a little thicker than my homemade curd, so get out that spatula and try to keep the spread thin. You still want the raspberry flavor to shine through.
Regardless of whether you make your own or go with store bought, I like spooning extra lime curd on top of the pie. It makes it shiny and makes your mouth water just looking at it. Whatever you choose, make sure it’s the perfect combination of sweet and tangy for your palate. Since mine was homemade it was a little thinner than what you might find in a store but I liked that it helped me get a thin layer across the whole cheesecake in a perfect ratio.

Decorate as you please! I really liked the simple beauty of two ring a of raspberries and the spread of lime curd across the filling. It highlighted the beautiful flavors of a raspberry lime cheesecake. But grab some fresh whipped cream and go ham with sprinkles or lime zest, or if you fancy—a cocktail twist of lime and some extra zest to really bring out the green color of the lime.

Ingredients
raspberry cheesecake filling;
- ½ cup heavy cream
- 8 oz cream cheese
- ¼ cup powdered sugar
- 1 Tbsp lime juice
- 2 tsp lime zest
- 1 tsp vanilla extract

- 1 pie crust (prepared or baked, ready for filling)
- 12 oz raspberries
- ½ cup lime curd
Instructions

- Bake or prepare your pie crust according to instructions. Set aside.
- Add ½ cup heavy cream to a medium bowl and whip with a stand or hand mixer on medium-high speed for about 3 minutes, or until stiff peaks form. Set aside.
- Beat 8oz softened cream cheese for 4 minutes with a mixer on medium-high speed, until creamy and fluffy. Add ¼ cup powdered sugar and beat again until smooth.
- Add in 1 Tbsp lime juice, 2 tsp lime zest, and 1 tsp vanilla and mix until evenly distributed.
- Add the whipped heavy cream to the cream cheese mixture and gently fold until incorporated. Be sure not to overmix.

- Take the pie crust and scoop the cheesecake filling into the crust. Smooth out the top, then spread the lime curd across the top in a thin layer. It works best if you add small dollops across the surface and then spread gently with the spatula.
- Decorate with fresh raspberries, arranging in two circles around the edge of the pie crust, or in any configuration you’d like. Optionally, top with extra lime zest
- Chill the pie in the fridge for 3 hours before serving.
