That umami blast of classic ramen seasoning is just so, so good. Ramen is a staple for a reason! Easy, fast, delicious, and slurpable! With my gluten-free needs these days, I had a craving for ramen noodles the other day, and I just needed to recreate that savory, salty broth. Paired with gluten-free noodles (or your favorite ramen noodles) you can have that delicious bowl of ramen with homemade ramen seasoning.

This ramen seasoning recipe is so easy to put together, and once you have it mixed, you can pull it out any time that need for ramen strikes! It makes about 4 servings for 2 people, using a Tablespoon for each serving. Although, not going to lie to you, I like to put a little more than a Tablespoon in for extra extra flavor.

The base of the ramen seasoning is boullion. This is where all the flavor base starts. I like using chicken boullion, but the great part about making things yourself is that you have full control of the ingredients. Use beef boullion for a beef stock ramen, or a vegetable stock to make this a vegetarian option. Just crumble up the boullion if you buy it in cubes, or if you have loose powder, use about 2 Tbsp of boullion.

I used chicken boullion here, but you can easily 1:1 swap in your favorite flavoring. Use beef boullion for a beef ramen, or vegetable boullion for a vegetarian option.

To make classic noodles all you need is the ingredients below, ramen noodles, and water. But don’t stop there! Spruce up your ramen with some extra pop of flavor. Use red pepper flakes for some heat, or if you love spicy ramen, try a swirl of sriracha and mix it into the broth and noodles. I also had furikake around and it makes a great garnish of seaweed, dried fish, and sesame seeds (among other things).

The benefit of making ramen yourself is that you can adjust it to dietary needs. For me that’s gluten-free noodles, but you can also adjust the stock base, or anything else you need!

Make this recipe and keep it on retainer for whenever the need for ramen strikes. The benefit of making it yourself is that you can adjust it to your dietary needs. For me, that’s gluten-free noodles. My preferred choice of ramen noodles is a millet noodle. I find that I can’t even tell the difference, and in the world of gluten-free, that’s the whole goal. But if you don’t have dietary restrictions, just grab standard ramen wheat noodles!

To make the bowl of ramen even heartier, pair it with a protein! Make some tonkatsu (fried pork cutlet) and lay it on top, or cook some chicken and add it to your bowl like I did here. Serve with some pan-fried salmon for a fresh fish option, or opt for straight and plan ramen noodles made with your homemade ramen seasoning. Really there’s no bad way to serve this dish.

Round out the meal with a protein, and don’t forget the toppings!

Don’t forget the toppings! For a spicy ramen, add a big swirl of sriracha and mix together with the noodles and broth. If you prefer a little sprinkle of spice, skip the sriracha and go with a sprinkle of red pepper flakes. Or go for extra umami depth of flavor with a little furikake sprinkled on top.

Ingredients

homemade ramen seasoning;

  • 3 bouillon cubes (~2 Tbsp) use chicken, beef, or vegetable
  • 2 teaspoons garlic powder or granulated garlic
  • 1 teaspoon onion powder
  • 1 teaspoon dried parsley
  • ½ teaspoon ground cumin
  • ½ teaspoon ground ginger
  • ½ teaspoon ground black pepper
  • ½ teaspoon kosher salt

ramen;

  • ramen noodles of choice (I use gluten free millet ramen)
  • 2 cups boiling water
  • 1 Tbsp homemade ramen seasoning
  • furikake (optional)
  • red pepper flakes (optional)
  • sriracha (optional)
  • crunchy garlic (optional)

Instructions

homemade ramen seasoning;

  • Crumble boullion cubes into a fine powder. Add in all ingredients and stir to evenly combine

ramen;

  • Bring 2 cups of water to a boil. Once bubbles begin to form in the water, add 1 Tbsp ramen seasoning into the water.
  • Once broth is brought to a rolling boil, add the noodles. Cook according to instructions or until noodles are tender.
  • Transfer noodles and broth to a bowl and add whatever toppings you like: furikake, red pepper flakes, sriracha, or crunchy garlic, to name a few.
