quarantine bagels;
What are quarantine bagels? Well, we all know that yeast is pretty hard to find, so these guys are no-yeast, 5-ingredient, no-boil bagels. And this recipe makes 4 bagels, perfect for a couple or family without having too many leftovers. Although you could pretty easily double the batch and make pizza bagels, yum. The latter might happen in the next few weeks, because I definitely want to make this recipe again! And we, uh, ate all four in one sitting between myself and my husband. Proof they’re yummy!
Do you ever have that feeling your phone is absorbing things you say? We were literally driving home this past weekend and I was craving bagels because we passed our old favorite bagel place and I said “I want a bagel”. But it’s 30 mins away, and the one we usually go to now that we live in our current house is still 15-20 minutes away, and it seems kinda silly to drive for 30+ minutes for two bagels on a weekend morning even if a fresh bagel is DELICIOUS. But I was lying in bed after getting home and what pops up, but a bagel recipe! One that I already have all the ingredients for, so of course I had to make them! No yeast, since that’s hard to come by and so simple, and doesn’t make a huge batch, so they’re perfect for quarantine!
These guys are a little softer than chewy for a typical bagel, but you also don’t have to boil and then bake them so still a happy trade off. Fresh baked bread makes up for a lot of things! I happen to be rolling in everything bagel seasoning, as I bought a container from Costco, which you can imagine is HUGE. But use whatever you have around your house! Try sesame seeds, everything bagel seasoning, toasted garlic, onion flakes, whatever floats your boat and doesn’t require a trip to the grocery store! You can even make your own everything bagel seasoning, but you’ll need a lot of ingredients: poppy seeds, black and white sesame seeds, minced dried garlic, minced dried onion, and flaky salt. These are quarantine bagels, after all, so get creative! And stay safe by using what you already have in your pantry.
There’s two things I want to mention here—I actually sprinkled a tsp. or so of the everything bagel topping into the dough. Totally optional, but I think it helps distribute the flavor a bit. But even if you don’t want to or don’t feel like it, you’ll have toppings that fall off or don’t make it onto the bagel. Pro tip—eat the top half first and then take any toppings that fell off and sprinkle on your cream cheese! It’ll stick, you’ll have less mess, and get even more flavor! Because you know we all are a little sad that the bottom half isn’t as flavorful because it isn’t smothered in as many toppings.
My second tip, is about the egg wash. I think this recipe is pretty lenient to let you use what you have on hand! The original recipe called for an egg white, but I only had an egg yolk and mixed it with a little water. I haven’t tried it myself, but I’m confident that a whole egg whisked for a wash would also work fine. I used everything bagel seasoning here, partially because I love it, and partially also because I bought a GIANT thing from Costco.
If your social distancing household doesn’t have greek yogurt, but you do have a low-fat sour cream, it could be a good substitute! I haven’t tried it myself, but I tend to sub greek yogurt for sour cream pretty easily one-for-one in a lot of recipes, so it would definitely be worth a try! If you do try this recipe with sour cream, be sure to let me know how it works for you! I’d love to know how it works. Maybe I’ll even try it myself, because it seems pretty likely I’ll make this recipe again during quarantine! Pizza bagels here I come!
