Do you ever have one of those nights where you want to relax with a drink, but all of your go-to drinks and cocktails don’t feel like they’re going to cut it? Well here’s where this pineapple party punch comes in! It’s that classy tropical drink that will whisk you away to paradise…am I overselling this? It’s good, but it’s no week-long vacation that’s for sure. But it might be just what you need for a mini stay-cation!
Or you can just be like T and me and make this on a typical Friday night while making a drinking game out of Beat Bobby Flay. Yeah I said it. You’re convinced we’re cool people now right?
I adapted the original recipe by Dorothy over at Crazy for Crust with what we had on hand. Namely:
– 1 can pineapple chunks in their own juice
– 1/2 a bottle of prosecco or champagne
– 1/2 c. Malibu rum
– ice**
**next time I make this I’m planning to try with frozen pineapple chunks instead of ice. I think this’ll pack it full of even more flavor and still give it that nice consistency.
I didn’t add enough ice to make it like my vodka slush or margarita recipe consistency; it was mostly to even out some of liquor and keep it cold since this was somewhat spur of the moment and I didn’t think to refrigerate the pineapple at all.
