2 NYE cocktails: sunset and sunrise mimosas;
New Year’s Eve might as well be synonymous with champagne! Ringing in the new year always calls for a little bubbly NYE cocktails. And I always like providing options to my guests. So why not go with a little sunset on 2022 and a little sunrise in 2023? For a new twist, try this raspberry sorbet sunset mimosa. And then celebrate the new year with a little tequila in this tequila sunrise mimosa!
NYE cocktails: raspberry sunset mimosa;
The raspberry sorbet sunset mimosa is a sweet and tangy treat, whereas the tequila sunrise mimosa is a perfect twist on the classic orange mimosa. I like finding new ways to spruce up champagne—or a way to use up that half a bottle you have leftover from last night! Champagne cocktails always go great with brunch.
For the raspberry sorbet sunset cocktail, get your Chambord ready! Chambord is a black raspberry liqueur that’s always a staple in my bar. I love the rich flavor, and hey it goes pretty great with chocolate when I make these raspberry chambord truffles. But back to the cocktail!
The Chambord adds an extra pop of raspberry alcohol to this cocktail. I like to measure the Chambord first because let’s be real, I usually don’t measure the champagne. (Don’t worry, I did once or twice to provide measurements in the recipe!) But I find cocktails like this best when they’re mixed to taste.
So measure your Chambord first. For an extra smooth cocktail, add the Chambord to a blender or bowl with an immersion blender. Then come in with the raspberry sorbet! Sorbet lends such a concentrated raspberry flavor to the mix. I’d add a splash of champagne and blend it up. When it’s a good slushy consistency you can leave off blending and just stir in the remaining champagne. This ensures you don’t blend out the bubbly!
Honestly, I’m usually lazy and measure on the Chambord, then pour in the champagne, and top it off with raspberry sorbet and just give it a stir. The sorbet keeps the cocktail cold and will melt over time. It can melt unevenly and give you a few clumps though, so blending can make a more cohesive cocktail. Up to you!
NYE Cocktails: tequila sunrise mimosa;
For those guests who want a spiked-up mimosa, you’ll have to try this tequila sunrise mimosa! Of course, I had to add some alcohol, and tequila pairs so well with citrus. When it comes to orange juice, I like a pulp-free option for cocktails. I just find that pulp can get in the way of sipping or get stuck in your teeth and no one wants that at a party.
To mix up this tequila orange bubbly for your NYE cocktails, mix up the tequila, lime juice, and orange juice. Come behind it at the end with your champagne to add in the New Year twist! For the full sunrise effect, add a splash of grenadine to your glass before pouring the cocktail over. I skipped it here however, because some of our guests don’t love the flavor.
Honestly, this cocktail is pretty easy to make. I like to mix up the tequila orange lime bit early and then pull out the champagne right before the party and mix it up before I set it up for guests. That keeps the bubbles bubblin’ and yet takes some of the pressure off mixing cocktails right as guests arrive.
The key to dressing up any festive cocktail is to have fun glassware and garnishes! Both the sunset and sunrise cocktails are fruity, so if you prefer to only grab one garnish, I recommend a lime for both. Both of these cocktails go well with a sugar rim, so take a citrus wedge and rub it around the rim of the glass, then roll it in sugar for a little fun sparkle.
I serve both of these in carafes and keep some extra stocked in the fridge for inevitable refills. You know these cocktails ain’t gonna last long! So which one would you go for? Orange or raspberry?

Ingredients
raspberry sunset mimosa;
- ¼ cup raspberry sorbet
- 4 oz chambord (½ cup)
- 1 bottle champagne
- lemon wedge + sugar for rim
- raspberries for garnish
tequila sunrise mimosa;
- 2 cups orange juice
- 4 oz tequila (½ cup)
- ¼ cup lime juice
- grenadine (optional)
- 1 bottle champage
- lime/orange wedges + sugar for rim
Instructions
raspberry sunset mimosa;
- Rub a lemon wedge around the rims of your glasses and roll the rim in sugar for garnish.
- In a large carafe or pitcher, add 4oz (½ cup) Chambord black raspberry liqueur. Add the sorbet and stir to combine. (For a smoother cocktail, use an immersion blender to combine smoothly.)
- Immediately before serving, pour in the champagne to taste. (I use the entire bottle of champagne). Garnish with raspberries to serve.

- Rub a lime or orange wedge around the rims of your glasses and roll the rim in sugar for garnish.
- In a large carafe or pitcher, add 2 cups orange juice, 4oz (½ cup) of tequila.
- Immediately before serving, pour in the champagne to taste. (I use the entire bottle of champagne).
- For the full tequila sunrise effect, pour a little grenadine into the glass (optional). Then pour the orange cocktail overtop. Garnish with orange or lime wedges to serve.
