I am obsessed. Like obsessed. My partner will attest. I think I’ve made this miso brown butter popcorn multiple times a week for the past two months. Miso brown butter popcorn is the popcorn flavor you didn’t know you needed in your life! A little bit of salt and whole punch of umami flavor on crisp crunch popcorn makes for the best snack!
It’s so easy to make too. Step one, pop your corn. Step two, add butter and miso to a pan to brown. Step 3, toss the popcorn with your butter. Then OM NOM NOM. Three easy steps, three easy ingredients! But don’t worry, I’ve documented the process in a little more detail for those that like recipes.
Popcorn was and is one of my favorite foods of all time. growing up, I used to say my three favorite foods were popcorn, pizza, and Peking duck. I’d come home from school and devour an entire bag of popcorn myself, easily. I’m that person that goes to movie theaters in the mall and buys popcorn, no movie, and then just eats it wandering around the mall. (Shoutout to my holmies that do this with me 😂).
When it comes to popping popcorn, there’s no right way. I use an air popper myself. It’s so easy, you just add popcorn kernels to it and it spits out delicious, popped corn every time. Occasionally it spits out an overzealous kernel and if you’re not careful a late bloomer can make your popcorn jump around, so make sure you have a deep enough bowl to catch the goodies.
There are so many options though, don’t worry if you’re not a fan of purchasing an air popper (though they’re surprisingly cheap). Microwave popcorn is always an easy alternative. There’s nothing wrong with prebagged popcorn either. It’s easy and takes very little planning and minimizes mess. If you choose a branded microwave popcorn, I’d suggest one with light butter (none of that “movie theater” stuff) or even no butter or plain if you can find it. You want a blank canvas to add that delicious brown butter miso flavor.
Then comes the miso brown butter. The key to brown butter in my opinion is waiting for the bubbles. The bubbles mean the water is cooking off and the fat will get darker and even more flavor. I find that the miso doesn’t really blend nicely into the fat so you get little particles and clumps. I actually find it makes it more delicious to find little pockets of flavor when I dig into a handful of miso brown butter popcorn. I use my spatula to smear it against the pan and try to break it up as small as I can though.
Any flavor or color miso will do nicely here, but my go to is still white miso. It’s classic, salty, and not too overpowering. - Pop your popcorn your favorite way! My air popper was a great investment, but there’s several microwave options as well. For fresh kernels to pop yourself, try this microwave silicone popcorn gadget. Or go classic on the stovetop, or go for convenice and grab a microwaveable bag from the store. If you’re going for those microwaveable bags, choose one with mild or no flavor. You’ll add all the flavor you need.
- When it comes to miso, use your favorite. Any color, any flavor will make a delicious popcorn as long as you like the miso. I gravitate toward white miso because it’s easy to find, won’t overpower dishes, and is so versatile. White miso goes wonderfully on this miso brown butter popcorn.
- Make a big batch and save some for later! That way you only have to do dishes once, but you can snack all week long! Or if you’re me, maybe two days, cuz it rarely lasts that long in my house.

Ingredients
- ½ cup popcorn kernels
- ¼ cup canola oil (if cooking on the stovetop)
- 3 Tbsp salted butter
- 1 Tbsp white miso (or preferred miso of choice)
- 1½ tsp kosher salt
Instructions
- Pop popcorn on the stovetop: Add the ¼ cup canola oil and add 3 individual popcorn kernels into a 6 quart saucepan. Cover and cook over medium-high heat until all three kernels have popped. Add the remaining kernels, cover, and remove from heat for 30 seconds. Then return the pot to heat and the kernels should begin popping within a minute. Cook, shaking occasionally until the popping sound slows, approximately 2 minutes. Near the end of popping, lift the lid slightly to let out steam and keep popcorn crisp.
- Pop popcorn in air popper: add ½ cup popcorn kernels to the air popper and turn it on. Pop into a large bowl.
- Pop in the microwave: Pop a bag of popcorn in the microwave according to bag instructions. Remove from microwave and open to allow steam to escape.
- In a small omelette pan over the stove, add 3 Tbsp butter. Heat over medium high heat.
- As butter begins to melt, add 1 Tbsp miso paste. Use a spatula to smear the paste into the butter and break up clumps as best as possible.
- Cook for 1-2 minutes until the butter has a nutty aroma and bubbles. Cook for another 30 seconds after frothy bubbles.
- Use a spoon or spatula to spoon some of the miso brown butter over the freshly popped popcorn. Sprinkle with kosher salt as desired. Repeat the process, tossing to evenly coat. Serve warm or store in an airtight container for up to a week.
