This is a nice, clean, vegetarian recipe! It’s super easy to make, and would also make a great side, although we ate it as the main dish tonight. It is definitely a little on the light side for a main meal, but was still super tasty. It’s got a variety of vegetables and a nice Mediterranean flair.
I ended up using yellow onions though the original recipe by Taylor over at food faith fitness used red onions. I imagine that red onions would be a little bit better because they’re less potent, and give an extra pop of color. But if you chop the regular onion up fine and let it sit out for a few minutes, I think it works just as well. And I’ll probably continue using yellow onions instead if only because it means less grocery trips since onions are a staple of my pantry.
The original recipe also used fresh basil, so I can’t wait to try this again in the summer when I have my own basil plants! You can swap out the 1/2 Tbsp. dried basil with 1-2 Tbsp. chopped fresh basil. I bet it would add an extra pop of freshness to this recipe!
