loaded whole30 french fries;
I posted earlier this week about my two-week look at whole30, and here’s one of the recipes I would definitely make again! It does take work, I’ll let you know, but for a filling, hearty meal that I’m excited about, it’s definitely worth it. Do note, that french fries are not technically acceptable on whole30, but I find it a gray area. The whole30 program specifically says “fries and chips” are off limits, but adds the caveat “if they’re commercially prepared or deep fried.” So if we’re playing the pedantic game, I argue that they’re homemade and not fried so they’re acceptable. Even if it’s a gray area, I’d say it’s a worthwhile compromise if you’ve been good for a whole week and need a good, hearty meal to look forward to.
I love the colors and the flavors of mixing the russet potatoes and the sweet potatoes. The subtle sweet of the orange sweet potatoes and the savory russet potatoes make a great base. And the seasoning mix adds a depth of flavor to the potatoes.
As for toppings, get creative! I loved this spread of lettuce, tomatoes, bacon, and ranch dressing. But you have so many options. Diced avocado, or if you’re craving protein, a fried egg or two, or crumbled sausage. Or even go the carnitas route and toss some pulled pork on for a super hearty meal. The Kirkland pulled pork from Costco is whole30 and delicious.
Let me know what toppings you used and what you thought in the comments below!
