hello fresh: juicy lucy burger;
So coming back from Iceland, I decided to do another round of hello fresh so that I wouldn’t be worried about grocery shopping and cooking and all that jazz when we were back. The first recipe we tried was a Dijon pork meal, that was satisfactory and I might post it at some point, but this juicy Lucy burger is definitely on my to-make-again list!
This burger is more than your typical throw-it-on-the-grill burger, and definitely is schmancy enough to be like a restaurant burger, but it’s fairly straight forward to make. I’d pull this one out when you want that restaurant feel at home, or want to put a gourmet spin for the adults in the room while still making plain jane burgers for picky eaters.
So you start off with the onion-tomato jam, which has about 4 ingredients, and is pretty low maintenance. The hello fresh meals that I received are made for 2 people, so I doubled the recipe for my own recipe card below, but I will say that I had plenty of onion-tomato jam left over that I’m looking forward to using on other things. A grilled cheese with it spread inside, added to some dip recipes, or on the next round of burgers!
The garlic spread definitely came out a pretty ugly color, I will admit, but I say, don’t let people see it, spread it on for them, and they’ll get all of the flavor and not have to look at the pasty brown color. T and I are garlic fiends, so the original recipe said “add as much of the mashed garlic as you like”. You’re welcome to take their advice, or do what I did, which was smash the garlic first and add everything to that bowl before I read that piece, because why–oh, why–would you leave any garlic sitting on the table and not eat it?? But that is our personal preference and no judgement (okay, a teeny amount of judgement, because who doesn’t like garlic?).
