Despite being brand new to the site, this recipe for cookie dough icing is tried and true. It’s one of my favorite icing recipes. In general, I’m not huge on cake. Not because I don’t like it—fresh cake is delicious, but it’s a lot of work when I like lots of other desserts just as much. It’s all the little ways the extra work adds up. Like mixing and baking the cake, then waiting for it to cool before being able to frost and assemble it.
Plus decorating cakes is a whole skill in of itself that I haven’t spent time on. To do an amazing job, you’re talking edible embellishments, various icings, and possibly colors. Plus being a family of two, it’s a lot harder to share because you need a knife and plates. Also, I’m not gonna lie, it’s annoying to get photos and cut into it when you’re trying to share it with people. Compare to say, a cookie or bar which is easy to grab and go. It’s also easy to taste test a few and then bring the rest into work or drop some off at a neighbor’s.
You might say, but Katie, that’s what cupcakes are for! And I would say….yeah that’s better but still more work. =P I won’t lie to you guys—I made these cupcakes from the box mix stuff. There is a time and a place for homemade baked goods, but this post is all about the icing. And I needed a vessel to display to you these delicious decadent beautiful frosting!
The best part about chocolate cookie dough is that it’s got just a hint of that savory sweet thing that make chocolate chip cookies just so. darn. good. And while vanilla and chocolate icings are both classics, I like how cookie dough icing is a little more exotic. And besides, who doesn’t love chocolate chips? After all, chocolate makes everything better!
I’ve also used this recipe on cakes before so be sure that it’s dual purpose. Again with the boxed mix—make two layers of brownie using the “cake-like” instructions, then use this frosting as filling and to frost the cake. It’s definitely an intense cake, but it’s ah-mazing. Definitely worth a try for all my fellow chocolate lovers out there. I need to work on my piping skills, but I’m not waiting on my technical skills to share this recipe! So here it is!

Ingredients
- 1½ cups brown sugar packed
- 1 cup butter room temperature
- 1½ cups flour
- 2 tsp vanilla
- 1 cup whole milk alternatively, ½ c. skim, ½ c. cream
- 1 cup mini chocolate chips additional for topping
Instructions
- In the bowl of a stand mixer or a large bowl, beat the brown sugar and butter on medium speed until smooth and creamy.
- Add in the flour and vanilla extract and beat until fully combined.
- Mixing on low speed, add the milk slowly until fully incorporated.
- Fold in the 1 c. mini chocolate chips. If frosting is overly soft, pop into the fridge until desired firmness achieved. Note: You’ll want to use a big enough piping tip so the chocolate chips won’t clog the opening. I find it helpful to pipe the frosting alone and then simply top with chocolate chips.
