We went whole-hog on dinner today! On the menu: caramelized onion crispy chicken, ranch broccoli, and melting potatoes! I did cheat a little and the ranch broccoli came out of a bag, but hey, you need those fast and easy dinner add-ons! Bonus points for it being a vegetable. But this caramelized onion crispy chicken was really pretty great. It was simple, and quite tasty.
I do say, since I adapted Dara’s Crispy Chicken with Caramelized Onions and Tomatoes sans tomatoes (T doesn’t like tomatoes in general), I want to add a sauce next time. I think a lightened up balsamic sauce would be a perfect complement! I’ll need to browse on pinterest to find some ideas though, because I’m not quite sure how to actually do that. Because I left out the tomatoes, I subbed in some roasted garlic that I had around!
I didn’t include it in the recipe, but roasted garlic is about the simplest thing you can make! Take a head of garlic and slice off the top so that the cloves are exposed. Drizzle in some olive oil across the top, then wrap in foil and toss in the back of a 350 degree oven for 30-60 minutes. When you take it out, the exposed garlic should be a dark brown color. Alternatively you can mince a bunch of garlic and saute it for a long time until the same caramelization happens. I suggest doing at least a whole head at once, potentially more if you love garlic as much as we do! Just cover it and stick it in the fridge and use it at your leisure.
It was a little bit of a production making dinner today…we’ve had some issues with our fire alarm going off. It has actually been better recently, after we got the complex to fix it two separate times, but today it went off and would NOT shut up. Usually we have a system, where we grab a smallish fan and the air circulation usually turns it off. I will point out that it goes off when we use both the oven and the stove, with no smoke, no anything. We think it’s heat sensitive. But at least the recipe still came out well, even with the anger-ful diversion.
