I’ve recently discovered buckinis, or buckwheat as an amazing crunchy snack. There’s something satisfying about chomping down on the kernels and my first thought was that it reminded me of granola bars! So I set out to make a homemade version that would allow me to small batch a couple of different flavors to keep on hand.

So far I’ve done a vanilla nut and dates, chocolate cranberry nut, and a peanut butter cranberry nut. Basically altering the powdered ingredient, and purchasing various nut mixes. I get my nut mixes from Trader Joe’s usually, or Safeway. But really you have freedom to use whatever nuts or dried fruit you want in there! Of course you can also buy separate ingredients for even more granularity in making unique combinations, but I find I like the ease of nut mixes. Plus if I buy individual ingredients it’s harder to buy in small quantities. If I buy a small mixed nut and fruit bag it’ll usually make at least 2 but usually no more than 5 batches so I can change up my flavors! I’ve got a nut, pineapple, pumpkin seed mix that’s next on my list to try!

It took a little trial and error, but I actually got a bar that sticks mostly together! Luckily granola is granola, whether in bar form or loose, so until I got the right ratios and ingredients I wasn’t wasting anything! If it was too crumbly, I would just use it atop yogurt or eat it straight–still tasty!

While I know it’s not the most eco-friendly, I like to individually wrap these and then store in a reusable bag for double layer of keeping them fresh, and for easy grab-and -go individual bars. Let me know what flavor combinations are your favorite!

Ingredients

  • 1 cup buckwheat
  • cup dried fruit
  • cup mixed nuts and seeds
  • 1 Tbsp cocoa nibs
  • 2 Tbsp agave syrup
  • 2 tsp protein powder
  • 1 egg white

Suggested flavors:

  • chocolate protein powder walnuts, pecans, dried cherries
  • PB peanut butter powder cashews, pumpkin seeds, dried cranberries
  • vanilla protein powder cashews, macadamia nuts, dried pineapple

Instructions

  • Chop mixed nuts and dried fruit as needed.
  • In a bowl add together buckwheat kernels and chopped mixed nut and fruit mix.
  • Mix in protein powder and agave and mix until all ingredients are evenly coated.
  • Add in egg white and mix to coat.
  • Line a large loaf pan with parchment paper and spray or coat lightly with oil.
  • Press the mixture into the pan, making sure to pack it tightly.
  • Bake for 10-18 minutes or until golden brown. Remove from oven and allow to cool before slicing into bars. Suggest slicing while still a little warm.

    Quick & easy recipe thank you! Tasty & healthy too! And love that it’s so adaptable! I added a couple of tablespoons (instead of teaspoons) of protein powder & it worked out great! Just wondering if it should be stored in the cupboard or the fridge please?

      These should be fine in the pantry since they’re baked, but they’ll dry out a little over time, so I like to individually wrap them. Thanks for leaving a comment and rating!
