Chop mixed nuts and dried fruit as needed.
In a bowl add together buckwheat kernels and chopped mixed nut and fruit mix.
Mix in protein powder and agave and mix until all ingredients are evenly coated.
Add in egg white and mix to coat.
Line a large loaf pan with parchment paper and spray or coat lightly with oil.
Press the mixture into the pan, making sure to pack it tightly.
Bake for 10-18 minutes or until golden brown. Remove from oven and allow to cool before slicing into bars. Suggest slicing while still a little warm.
