So let’s go with: I’m going to whip these out again one day and impress someone. They look amazing. They taste even more amazing. And you can pretend that they’re healthy (they’re not). I did forget to add that extra drizzle of caramel, but you know, that’s how these things go.
I used McIntosh apples because that’s what I had lying around the house, and I wasn’t able to make the nice rings that the gunny sack described. Because my apples were softer, I just cut out from the center instead, making sure not to cut through the base. The other change I made was to throw chopped walnuts on top for the last five minutes of the baking time. But I suggest serving the apples with ice cream to really round out the whole experience. Go big or go home, I say.

Ingredients
- 2 apples (e.g., honeycrisp, mcintosh)
- 2 Tbsp butter
- 3 Tbsp brown sugar
- 1 tsp cinnamon
- 4 caramels
- ¼ cup walnuts, chopped
Instructions
- Core the apples with a spoon or other utensil, and cut slices from the center, making sure not to cut the bottom so that they stay together.
- In a bowl, add the butter and brown sugar and microwave for 30 seconds. Pause to stir, and then microwave 30 seconds more if necessary. Remove and stir in cinnamon.
- Place the apples in oven-safe dish and stuff the centers of each apple with two caramels, then top with the mixture.
- Bake for 20-25 minutes. (Some apples may require longer or shorter baking times)
- Remove from the oven and top with ice cream, drizzle with caramel, and sprinkle with cinnamon as desired. (NB – Ice cream may harden the caramel center.)
