Okay, hear me out. A cold, crisp apple cider slush is going to be your new favorite. I know people are ready to throw down for fall weather and soups and pumpkin spice. But people like to forget about those random hot days that poke their heads out. Or those days when mornings have a brisk chill but then it climbs up into the 80s by the afternoon and you’re sweating in that sweater you tossed on this morning. Well, this apple cider slush couldn’t be easier! Just two ingredients and one of them is water.
Because the star of this apple cider slush show is the apple cider, you’ll want to go with a good quality cider. I love visiting local farms or farmers markets. Usually once fall hits you can find fun seasonal markets, corn mazes, and apple picking. So just pick up some cider for your apple cider slush while you’re out with family and friends! Or pull out the apple cider slush recipe when you’re a little sick of that gallon of cider your kids begged you to buy.
Really, all you need to do is freeze the cider. Ice cubes work best because their size makes them easy to handle and blend. You can use any kind of ice tray—silicone, plastic, whatever you’ve got. If you only have one or two trays, don’t worry. I’ve done multiple freezings over several days for a large crowd. I just pop out the cider cubes and collect them in a Tupperware that gets stored in the freezer. But that will free up your ice cube tray for more batches of cider to make your apple cider slush.
I find that each of my ice cube trays hold around 1¾ of liquid and one tray makes roughly two servings of apple cider slush. However, your trays might be different so you may want to experiment.
I also reserve some liquid apple cider to get the blending started. It’s easiest to add a little liquid to the blender to help with blending, so why not use the potent flavor of cider itself? If after the cider I need a little more liquid to get to the perfect consistency, I’ll just add a splash or two of water. I find the apple cider is so potent, you won’t notice it at all. Or if you forget to save some cider and make it all cubes, water will work perfectly fine.
The inspiration for this apple cider slush came from the Bloomsburg Fair which I’ve attended nearly every year since college, flooding and COVID excepted.
secrets to success;
- Find a good apple cider! It’s basically the only ingredient. I love trying ones from local farms or farmers markets or apple picking, but I’ve also made these with my supermarket brand cider because I really like how tart and flavorful it is. I tend to prefer a cider on the tart side. I find it really refreshing when you’re making apple cider slushes.
- Don’t freeze all your cider! Keep some of it liquid to help start off your blending process.
- If you don’t have any extra cider or need some extra liquid to get it to that perfect, slush consistency, add some water. Cider has such a strong potent flavor you won’t notice a few splashes of water.

Ingredients
- 6 cups apple cider
- 4-8 Tbsp water (or as needed)
Instructions
- Set aside roughly ½ cup cider for later. You can just leave it in the gallon or container it comes in.
- Fill ice cube trays with 5½ cups of cider. This may depend on the size of your ice cube trays and cavities, but 1¾ cup is roughly the capacity of one ice cube tray for me, so 5½ cups fits roughly in 2 trays.
- Store in freezer and freeze until solid, best overnight. (You can also do this in batches, just remove the solid cubes to a freezer-safe container and repeat.)
- Add the frozen cider cubes to a blender. Add ½ cup reserved cider and blend on medium until appropriate slush texture is achieved. I like it liquid enough that the cider liquid will pool if you make a cavity in the slush, but frozen enough it’ll keep the spoon’s shape. If too thick or having trouble blending, add water 2 Tbsp at a time until desired consistency is reached.
