Snickerdoodles are a classic and while I always reach for chocolate cookies if I have an option, you still need a classic cinnamon snickerdoodle in your repertoire! (I mean the name of my blog is Best with Chocolate and there ain’t no chocolate in this snickerdoodle!) Even if snickerdoodles don’t pack chocolate, these little cookies are delicious. Warm from the oven, and pillowy soft and cinnamon sugar in every bite. I admit, sometimes I forget how good classic cinnamon snickerdoodles are!

The recipe itself is pretty straightforward. But one key step not to miss is to let your dough rest and chill in the refrigerator. It allows the dough to really set up nicely and ensures you get a pillowy soft cookie. Don’t skip the refrigeration!

If you bake them right after the initial mix they may spread a bit more than you want. And classic cinnamon snickerdoodles have to be soft. In my opinion snickerdoodles need to either be soft or chewy. Pick a side, but snickerdoodles aren’t crunchy or thin.

How thick do you like your cookies? These spread a little but not much, especially after resting in the fridge. So if you prefer mounds, keep them shaped as-is when they come out of the cookie scoop.

For the aesthetics of photographing the classic cinnamon snickerdoodles I chose to press down lightly. If you have time and are able, I also recommend actually scooping the dough into balls before throwing them in the fridge to chill. Once they’ve been refrigerated, it’s hard to scoop individual items and harder to flatten before baking.

If you prefer flatter snickerdoodles, flatten them slightly before baking.

My secret? Dip these bad boys in sugar, yes before you bake them–but also immediately out of the oven so it gets an extra dusting of sugar! Then they get an extra light crunch of sugar when you bite into them. And besides, more cinnamon sugar can’t be a bad thing for cinnamon cookies!

Double the sugar for extra cinnamon sugar goodness–one dip before baking and one dip after!

Ingredients

Cinnamon Sugar

  • 1 Tbsp sugar
  • 3 tsp cinnamon

Snickerdoodle Cookies

  • ¾ cup sugar
  • ½ cup butter
  • 1 egg
  • 1 tsp vanilla extract
  • all-purpose flour
  • ½ tsp cream of tartar
  • ¼ tsp baking soda
  • ¼ tsp baking powder
  • ¼ tsp salt
  • 1 tsp cinnamon

Instructions

Cinnamon Sugar

  • In a small bowl, whisk together sugar and cinnamon and set aside.

Snickerdoodle Cookies

  • In a large bowl, cream together butter and granulated sugar.
  • Add in the egg and vanilla, and mix until incorporated.
  • Add in the flour, baking powder, baking soda, cream of tartar, cinnamon, and salt and mix until just incorporated.
  • Using a cookie scoop, roll out balls approx. 1 Tbsp. volume.
  • Chill the dough for at least 2 hours, or freeze 20-30 minutes.
  • Take out balls and coat all over in the cinnamon sugar mixture.
  • Bake 12-14 minutes or until just beginning to brown. Remove from oven and allow to sit one minute, then dip top in remaining cinnamon sugar while still warm.
