These soft, small batch toffee cookies have gotten compliments time and time again. There’s something inherently satisfying about these thick cakey cookies topped with a smattering of crunchy, melty toffee bits. The name says it all: soft toffee cookies.

With notes of buttery sweet throughout a pillowy cookie, those toffee bits lend a rich caramelized sugar flavor. And of course you have to reinforce that toffee flavor with extra toffee bits on top of your cookie for that satisfying toffee crunch.

I like to use a 1 Tbsp spring-release scoop to portion out these small, cute cookies. But if you prefer a larger size, try doubling the size and bake for an extra 2-3 minutes.

Soft toffee cookies are perfect for using up leftover toffee bits. I don’t know about you but I find that when I purchase heath bits for a recipe I seem to hang onto them forever. Not that I’m complaining really, because it lends itself to trying out recipes like this soft toffee cookies one! But you never seem to need the whole package even for recipes like pecan toffee shortbread cookies. The answer? Make more cookies!

A couple things to know about these soft toffee cookies. Firstly, they’re addictive. Secondly, the toffee bits melt a bit in the oven. When cooling they re-harden some but it’s not quite with the same crunch as you started. They almost get a little more caramelly because of the heat. I like pressing just a small smattering of toffee bits into the top of the cookies immediately after removing from the oven. Just enough to add back that satisfying crunch.

Try other toppings like M&Ms (or go with mini M&Ms), chocolate chips, nuts, raisins, or sprinkles! The cookie dough is a delicious soft canvas that holds up to your favorite toppings.

Refrigerate the dough. I was always one of those people that skipped the refrigerate step of cookie baking…until I started photographing for the blog. It really makes a difference in the roundness and softness of your cookies to chill the dough.

That said I’m still incredibly impatient and will often pop my cookie dough in the freezer after scooping them onto the cookie sheet. I find this makes the dough easier to scoop while it’s still soft, and using the freezer instead of the refrigerator means quicker temperature drops. And with faster cooling of the dough, you get them to the oven faster, and to your mouth faster!

These cookies are soft but not crumbly, so I love to give them as gifts. I like cute little bite-sized cookies and then stack them tall. For an easy gift wrap take a sandwich bag (not a ziplock, one of the fold-over ones) and stack the cookies in it. Snip the part that folds over and then twist and tie with a pretty ribbon or a fancy twist tie. I like using regular wrapping ribbon and just curling the ends with scissors. Ingredients

  • 4 Tbsp butter softened not melted, not cold
  • ½ cup brown sugar
  • 1 tsp vanilla
  • 1 large egg
  • 1 cup plus 1 tablespoon all-purpose flour sifted then measured
  • ½ tsp baking powder
  • tsp salt
  • cup toffee chips

Instructions

  • Cream together 4 Tbsp butter and ½ cup brown sugar. Add vanilla and egg and mix to combine.
  • Add flour, baking powder and salt combine until incorporated.
  • Add toffee chips and stir until well distributed. Reserve several toffee bits for the top, if desired.
  • Refrigerate the dough for 1 hour or alternatively, freeze for 30 minutes.
  • Scoop the cookies using roughly 1 Tbsp of dough. Place on a parchment paper lined baking sheet. Bake for 9 minutes at 350°. Centers may not set until cookies have cooled. If you prefer crisp cookies, bake for an additional 1-2 minutes, but keep a close eye on them as they could burn and overcaramelize the toffee bits. Enjoy!
