If sushi is intimidating to you like it is to me, then try out this easy alternative! Layers of shrimp, avocado, cucumber, and rice, topped with a savory sriracha mayo makes for an easy at-home sushi substitute! – – If you’re like me, homemade sushi is intimidating. Not because I think the steps are ultimately hard in of themselves, but because it seems like you need so many special ingredients and tools. For me, namely the bamboo mat and the nori (seaweed). Those are two things I don’t typically have on hand, and lucky for me, this recipe by Gina at…

Silken tofu baked to perfection with a delicious thick honey sesame sauce, perfect over white or brown rice or vegetable fried rice (tipsychocochip recipe)! – – I’m all about that silken tofu. All the food bloggers that I read swear by cooking with firm or extra firm or super-duuper-extra-extraordinarily-firm. Sure, it makes life easy in the kitchen. But I just don’t like to eat it. I made this for a quick dinner today, and it was tasty and looked just like the pictures over at damndelicious! I made them for dinner with some fried rice to whip in some veggies, but these would also be perfect as an appetizer! Make the meatballs a little bit smaller for an appetizer, but would be a good small party recipe. If you had more than around 6 people I’d double the recipe (but in either case would still serve another app or two)! Honestly, I don’t even have much to say about this recipe because it’s so straightforward.…
