I was pleasantly surprised at this meal from Hello Fresh (click here if you’re interested in a discount!). It’s name was “panko crusted cod”, which I don’t think does the recipe justice. It’s more interesting than just slapping some panko on cod! With a little wasabi-lime kick, it’s definitely something I’d consider making again! The side dishes were appropriately meh. We went whole-hog on dinner today! On the menu: caramelized onion crispy chicken, ranch broccoli, and melting potatoes! I did cheat a little and the ranch broccoli came out of a bag, but hey, you need those fast and easy dinner add-ons! Bonus points for it being a vegetable. So a friend sent me a Hello Fresh discount code for 1/2 off a week’s delivery and I forgot about it for months until I got a reminder e-mail from Hello Fresh (guess those reminder e-mails do work!).
