Waffles are for the weekend. These sweet-inspired stuffed cheesecake waffles combine fruity flavors with rich cream cheese all served inside your favorite waffle mix! Plus, if you make extras, they double as dessert for later in the week! These fluffy waffles are stuffed full of all the flavors, and of course, you’ll need to serve more on top to boot. Here they’re pictured with strawberry cream cheese filling and toasty cinnamon apples, but I’ll break down some other great options below.
The idea for these cheesecake waffles recipe was born from some leftover strawberry cheesecake mixture I had when I made strawberry lemonade cheesecake bars! I’m always a fan of leftovers, and you can make your stuffed cheesecake recipe quick and easy or as a labor of love.
Start with your favorite waffle mix. If you’ve got a little more time on a Sunday morning, make your own waffle mix from scratch. (It says pancakes but I promise it makes for great waffles as well. If you’re feeding more than 2 though on these stuffed cheesecake waffles, make sure you double or triple that recipe since it’s a small-batch recipe).
But honestly, most weekends I’d rather just reach for the boxed mix and spend my time on the cheesecake filling and fruits. Bisquick works great, or King Arthur Flour mixes–these days I reach for the gluten-free King Arthur baking mix.
The key to stuffed cheesecake waffles is mise en place (aka getting your different ingredients prepped). Start by heating up your waffle iron. Make sure you have cooking spray nearby as well–with all the stuffed fillings and fruit, you really want to avoid your waffles sticking to your iron. Trust me, it’ll be the mess that never ends.
Prepare the batter, cheesecake filling, and fruit before you start filling the waffle iron. If you know how much batter usually goes into your waffle iron, remember you’ll need a little less batter overall for each waffle because the fillings take up (delicious) space! I start by dishing up a couple spoonfuls into the waffle iron–just enough to cover the bottom and seal off the waffle.
Then moving quickly, I add a dollop of cream cheese filling to the waffle, smoosh it down and out if I need to, and sprinkle in some fruit. Ladle some more batter on top, close the lid and let the waffle iron do its thing. It can take an extra minute to cook because of the juicy wet fillings inside, so just check as you go. Repeat the process for all your batters and serve your stuffed cheesecake waffles while they’re warm!
Choose your character! Fruit character that is–I’ve made these both with strawberries or apples! Or mash them together for a delicious combo. My photos here use strawberry cheesecake mixture in my stuffed cheesecake waffles, and then topped with cinnamon apples. But for my summer strawberry lovers, go all strawberry with strawberry jam and top with strawberries + cream; for my apple-heads, use apple butter instead to mix into the cheesecake mixture, and then sprinkle stovetop cinnamon apple chunks over top.
Your imagination is your limit when it comes to toppings! Serve with butter, maple syrup, whipped cream, jam, or whatever your heart desires. Of course, don’t forget to use up any of the fruits or cheesecake filling that didn’t make it inside the waffles–they taste great on top! Maybe even throw on a few chocolate chips or serve with vanilla ice cream and make it breakfast for dessert!

Equipment
- waffle iron
Ingredients
waffles;
- your favorite waffle mix, according to instructions (e.g. 2 cups Bisquick, 1 cup milk, 1 egg)
- cooking spray
cheesecake filling;
- 4 oz cream cheese
- 2 Tbsp sugar
- 1 Tbsp strawberry jam (or try subbing apple butter!)
- ½ tsp lemon juice
strawberry fruit topping;
- 1 cup strawberries, sliced
- 1 Tbsp sugar
- whipped cream
apple cinnamon fruit topping;
- 1 apple, granny smith suggested
- 1 Tbsp sugar
- 1 tsp cinnamon
- 1 tsp water
Instructions
cheesecake filling;
- In a medium bowl, combine 4oz cream cheese, 2 Tbsp sugar, 1 Tbsp strawberry jam, and ½ tsp lemon juice. Mix until thoroughly combined. Feel free to taste test and add more jam or sugar if you like it extra sweet.
strawberry fruit topping;
- Cut strawberries into slices or dice into small chunks and add to a medium bowl. Sprinkle with 2 Tbsp sugar, toss together until evenly coated and set aside.
cinnamon apple fruit topping;
- Optionally peel 1 granny smith apple (or leave the skins on for extra nutrition). Dice into small chunks–the smaller, the faster they'll cook.
- Add diced apple bits to a small pan together with 1 Tbsp sugar, 1 tsp cinnamon, and 1 tsp water.
- Cook over medium-high heat, stirring occasionally to keep from burning. If the pan becomes dry, add more water, 1 tsp at a time. Cook until apples are soft and thoroughly coated and the cinnamon sugar mixture has become sticky. This usually takes 3-7 minutes depending on the size of your apples
waffles;
- Preheat your waffle iron, and prepare your waffle mixture according to instructions. Make sure to use cooking spray or butter on your waffle iron before each use to make sure those waffles come out clean!
- Pour a spoonful or two of batter into the waffle iron. (This should be slightly less than half of what you'd use to make a full waffle normally).
- Moving quickly, add a dollop of cheesecake filling on top, and spread it out slightly with a heat-safe spatula. Optionally sprinkle in some of your fruit filling if desired.
- Quickly cover with another spoonful or two of batter and close the waffle iron. Allow to cook according to instructions on your mix, and I usually add a minute or two because of the wet ingredients stuffed inside. Remove when golden brown and repeat until remaining batter is gone.
- Serve waffles with your favorite toppings–maple syrup or whipped cream, and make sure to spread any leftover cheesecake filling and sprinkle any remaining fruit over top!
