You remember those strawberry shortcake dessert bars?  Well serve up your own giant-sized crunch cake!  An adult-sized vanilla cake with a strawberry ice cream center topped with that strawberry crumble!

I’m back!  Well, trying at least to get back in the swing of things, although life’s been a little crazy lately and I doubt I’ll be able to do a full three recipes a week (Mon-Wed-Fri) like I have been.  I think for a while I’ll switch to one post on Friday, and even then I may not be posting new recipes each time, but might revisit some of the yummy ones I’ve already posted!  But I’m back with a vengeance, and a delicious recipe for you: Strawberry Crunch Ice Cream Cake!

You all remember those strawberry shortcake dessert bars growing up right?  I feel like they’re one of those things that just taste like childhood. I don’t know if it’s just me because there would be an ice cream truck when we went to the beach every summer, or we went to summer camps where we got popsicles every Friday and these were the coveted popsicles, or because they’ve transcended generations and everyone loves them!  No matter what, I’m here to say this cake delivers. 

It tasted like everything I wanted it to.  I guess the original bars really do use freeze-dried strawberries, or something pretty similar, because it’s delicious for sure.  If you’re looking for freeze-dried strawberries, my suggestion is Trader Joe’s!  Check out their fruit and nut aisle, which is where I found mine.  (Also while you’re at it, buy yourself a bag of cocoa almonds.  Because they’re amazing, and you deserve it!)

This recipe was a real hit at our housewarming party a few months back, so much that I’m definitely looking to make it again!  I’d also love to figure out the chocolate version of this….mmmm!
